So this is NOT an accurate representation of the paleo lifestyle...think minimal fruit (that's a sugar) and certainly no "snacks" with every meal (by the way, most of those are desserts)...but I appreciate the concept of more healthy, less potato chip fort kids lunches. Just do your research...can't just slap a Paleo label on it because it's becoming popular!
No Pasta Lasagna | Precook ground beef with onions and garlic. Salt zucchini and eggplant and set aside for 10 mins. Blot excess water. Fry eggplant slices in olive oil 1-2 mins each side. Bake at 375° for 20 mins. Mix cheese and egg. Layer veggies, cheese and sauce. Bake at 400° for 15-20 mins.
Paleo Avocado Tuna Salad by Cook Eat Paleo. A great lunch or snack in 5 minutes with just 4 essential ingredients. ***I substituted salmon or chicken for tuna and rolled it in a lettuce wrap. I like it even better.
