3c quinoa  Salt  1can black beans  2c diced cucumber  1sm red onion, fine mince  2c fine diced tomatoes  1/2c chopped cilantro  4tb lime juice  2tb red wine vinegar  6tb olive oil  avocado, sliced    Cover quinoa in bowl w/ cold water, sit 5m. Strain  until water clear.   Quinoa w/salt in med saucepan. Cover  15m until tender  Drain  black beans as quinoa cools.    Combine veg's, vinegar, lime juice, olive oil in bowl. Add quinoa & toss together. Garnish w/avocado.
