Cheesy Zucchini Rice (I know. Zucchini again! But our mini-garden produces like mad. Loved the combo of cheesy rice and Zucchini - quick and easy meal; like always I added a bit more cheese - different types I had as left-overs)
"cooler corn"? A Coleman cooler, wiped clean, then filled with shucked ears. Next, two kettles-full of boiling water poured over the corn and the top closed. 30 minutes later, the corn is perfectly cooked. And I'm told that the corn will remain at the perfect level of doneness for a couple of hours. Perfect for BBQs!
