I have such a hard time finding the Swiss Steak bag and seasoning at my grocery store that I got annoyed and did some searching online. Found this recipe and it is even better than the original. Was not able to find dehydrated green bell peppers so I broke out the dehydrator and did it myself. Made flakes for measuring purposes and then put all the ingredients in a small chopper and powdered it. Seems like A LOT to put on 1 1Andfrac12; lbs of eye round but it came out fantastic. The swiss steak preparation directions I followed were McCormicks rather than Athenas. I put the powder on both sides of the steak piercing it with a fork. Let it sit 5 minutes as I mixed the water and tomato sauce. Put steak in a cooking bag and poured the sauce/water over the steak. Pierced the bag in several places (top) and baked at 350 for 45-50 minutes. Use coarse ground black pepper. (Prep time=cooking time after powder mix is made).

This tasty burrito filling is something like a chilli but is fantastic wrapped in a tortilla. When done, top off with your favorite burrito condiments, such as cheese, sour cream, grilled veggies, lettuce, avocado, salsa, hot sauce, onions, sprouts, olives... you get the idea- and wrap in a tortilla (I like whole or multi grain). I use a 6 quart crock pot. If yours is smaller Id suggest using less liquid. If it turns out to be too watery, then take the lid off and let it cook down a bit. Adjust the seasonings for your own taste- use less or more chilis. If you are not crazy about cumin try some taco seasoning instead. This recipe is flexible. Cook time does not reflect the overnight soaking time of the beans.

Roasted Lemon Garlic Herb Shrimp: olive oil, lemon, garlic, thyme & fresh shrimp baked in glass baking pan in 400 degree oven for 10-12 minutes. I served this over Lemon Linguine w/ Garlicky Breadcrumbs (see 11/11/14 pin for pasta recipe). It was spectacular! I added stir-fried greens and shredded carrots on the side. I liked the combo as much as my other fave shrimp recipe: Honey Grilled Shrimp (on allrecipes.com). This is my new favourite way to cook shrimp. Made 11/11/14 RM
Roasted Garlic Herb Shrimp 1/3 cup olive oil 1 lemon, zested then half cut into thin slices and other half into wedges 3-4 fresh thyme sprigs, leaves removed sea or kosher salt and fresh black pepper spaghetti/pasta, couscous or rice for serving 1 pound fresh shrimp, medium-sized, deveined with tails off 5 cloves garlic, minced 1. Preheat oven to 400 degrees F. In a 9×13 baking pan combine olive oil, lemon zest and thyme. Season with salt and pepper. Bake in oven for 12 minutes. Meanwhile cook pasta, couscous or rice. 2. Remove pan from oven, add shrimp, garlic and the thin sliced lemons (don’t squeeze them), toss to coat with oil mixture. Bake for 8-10 more minutes or until shrimp turn pink and start to curl. Serve over pasta, couscous or rice tossed with extra-virgin olive oil and fresh-squeezed lemon with additional lemon wedges for serving.

Spinach Crust Pizza. This is absolutely delicious! The only problem with this is that the "crust" in this recipe is not solid. You will be spooning the whole pizza into a bowl and eating it that way. trust me, i did it. To fix this problem I bought a store bought dough and made the crust in this recipe and put it on top of my store bought dough. Do everything else according to directions. Almond cheese rounds - another low carb bread idea made with almond flour and cheese LV2SUN'S ALMOND CHEESE ROUNDS 4 ounces cheddar cheese, shredded (1 cup) 3 ounces almond flour (1 cup) 2 tablespoons butter, softened 1 egg 1/2 teaspoon garlic powder 1/4 teaspoon salt Mix all of the ingredients well with a spoon until they form a soft dough. Divide between 6 muffin top pans and press to make flat rounds. Bake at 350º about 10-12 minutes until golden brown. Best served while still warm from the oven. VARIATION: Drop 6 mounds of dough onto a small parchment-lined baking sheet and bake for about 20 minutes. Check them after 15 minutes and add more time, if needed. Makes 6 servings Per Serving: 205 Calories; 18g Fat; 9g Protein; 3.5g Carbohydrate; 2g Dietary Fiber; 1.5g Net Carbs This recipe is from Food.com. Although mine don't look much like Tea Jenny's photo, they're delicious. Because mine didn't puff up as much as hers did, I think that gave them a more crusty exterior and not as much of a soft interior. They have a crunchy, cheesy biscuit texture that would go very nicely with chili or soup. They also make a nice snack. They remind me somewhat of Red Lobster's Cheddar Bay biscuits but better because they're more cheesy and not as dry. I think if you put a basket of these on the dinner table even non-low carbers would gobble them up. Click the photo to see a close-up. Previous pinner's UPDATE 1/28/13: If you don't have a muffin top pan, you can still make these. Just line a baking sheet with parchment paper and drop the dough in 6 little piles. Gently press them into flat, round shapes about 3 3/4" across. If you make them smaller than that, leaving the dough more mounded, the center will come out softer but I think that would still be fine. I haven't tried baking them this way so I don't know if the dough will spread as it bakes. I don't think it will. The key is to get them nice and brown on the outside. Also, these taste very good right out of the fridge without reheating them. Previous pinner's UPDATE 3/13/13: Today I made the dough into 6 drop biscuits and I think I like them even better that way. They will take a little longer to bake though and you'll need to watch them closely for the last few minutes so that they don't burn on the bottoms. You want the outside to be quite brown and crusty and the inside will still be a little soft like a biscuit. I had to add at least 5 more minutes. Since these already come out small, I don't think I'd try making more biscuits from the batch. Here's a photo (click to see a close-up): Previous pinner's UPDATE 3/17/13: I've made these a few times now as drop biscuits and they seem to take about 20 minutes of baking. Of course you'll need to check yours before that in case your oven is hotter than mine. I've also noticed that they seem to be done when most of the grease around them on the baking sheet has re-absorbed back into the biscuits.
