Cold Lemon Pasta Salad-meant to be made the day before and served cold. Gorgeous on a buffet table if made in a trifle bowl as pictured.... Ingredients: 1 tablespoon olive oil 2 cloves garlic, minced 1 cup heavy cream 1 cup chicken broth 1-2 lemons (juice and zest) 2 tsp kosher salt 1 tsp black pepper 1 pound pasta 1/2 cup freshly grated Parmesan or Romano cheese - ½-1 bag of baby arugula - 1 pint grape tomatoes, halved - 1 10 oz package of frozen peas, thawed Cook pasta: Boil water and start to cook pasta according to package directions. Saute garlic: Meanwhile, in a medium saucepan, heat olive oil over medium heat. Cook the garlic briefly (less than 1 minute or so, careful not to burn). Cook and reduce: Add the heavy cream, lemon juice and zest, chicken broth and salt/pepper. Bring the mixture to a boil, then lower heat. Simmer sauce for about 15 minutes. It will reduce and start to thicken. Combine: Add the sauce to the cooked pasta. Add the vegetables. Add the cheese at the end. Serve: Serve with extra cheese, if you like.

Zucchini, Tomato & Fresh Herb Fettuccine (clean eating recipe) INGREDIENTS: 10 oz whole-wheat fettuccine 2 tbsp olive oil 4 shallots, thinly sliced 4 cloves garlic, thinly sliced 2 zucchini (preferably 1 green and 1 gold), halved lengthwise and cut into 1/4-inch slices 2 lb tomatoes, cut into 3/4-inch cubes (about 4 1/2 cups) 3/4 tsp fine sea salt 1/2 tsp fresh ground black pepper 1/3 cup chopped fresh basil 1 1/2 tbsp chèvre (spreadable goat cheese) INSTRUCTIONS: Cook fettuccine according to package directions; drain. Meanwhile, prepare sauce: In a large skillet or sauté pan on medium-high, heat oil. Add shallots and cook, stirring occasionally, for 1 minute. Add garlic and cook, stirring occasionally, until shallots and garlic are tender, about 1 minute. Add zucchini and cook, stirring occasionally, until tender, 3 to 4 minutes. Reduce heat to medium and add tomatoes, salt and pepper, stirring until tomatoes are heated through, 2 to 3 minutes. Remove skillet from heat and stir in basil and chèvre. This is a mispin....the recipe calls for wonton wrappers but string cheese will not fit in them so I had to cut them in half..also they fried them obviously..I recommend egg roll wrappers and I DID bake them for 15-20 minutes at 350 and they were damn good !!! mozzarella sticks - string cheese + wonton wrappers + baked, not fried :) GREAT idea!

Ingredients: 12 pieces string cheese 12 egg roll wrappers Oil for deep-fat frying Marinara or spaghetti sauce Directions: Place a piece of string cheese near the bottom corner of one egg roll wrapper (keep remaining wrappers covered with a damp paper towel until ready to use). Fold bottom corner over cheese. Roll up halfway; fold sides toward center over cheese. Moisten remaining corner with water; roll up tightly to seal. Repeat with remaining wrappers and cheese. In an electric skillet, heat 1/2 in. of oil to 375°. Fry sticks, a few at a time, for 30-60 seconds on each side or until golden brown. Drain on paper towels. Serve with marinara sauce. Florida Avocado Summer Wrap vegan, makes 2 wraps 2 extra large wraps (any variety) 1/2 Florida Avocado, peeled and sliced into thick strips 1 medium yellow tomato, sliced thick (red works too) 1 small sweet onion, sliced 4 Tbsp lime juice (or lemon) 1 Tbsp apple cider vinegar (or more lime juice) 2 tsp maple syrup 6 Tbsp spicy bean or nut spread (see below) 1 cup shredded carrots fresh ground black pepper

Rub the extra half with lime juice, cover and stick in the fridge for later use. Or make 4 wraps and use the whole thing. Remove the pit and slice into long thick strips. Set aside in a bowl and coat in lime juice and a pinch of salt and pepper. 2. Slice your onion and tomato. Place in separate bowl and toss with the EVOO, maple syrup, splash of lime juice and apple cider vinegar (or more lime juice). Note, you can also use lemon juice if you'd prefer. 3. Grab your bean/nut spicy spread. See above recipe for options. I used a chipotle hummus dip mixed with a splash of lime juice to thin it out a bit. 4. Warm your tortillas in the oven until they are soft and pliable. 5. Spread a nice amount of your spread onto the wrap. 6. Add about 4 long slices of avocado, a few slices of tomato, onion, shredded carrots and a pinch of pepper. You can add an extra splash of the veggie marinade juices (maple/EVOO/lime) if you'd like. I actually whipped the extra marinade with a Tbsp of Vegenaise to make a wrap sauce on the side. Yum. 7. Carefully roll up your wrap and fold in a paper towel to make it easier to slice. 8. Serve! Sprinkle a few pumpkin seeds on top if you'd like.
