Very lean meat will absorb the rice and be dry, so either use less lean or add more moisture (another egg or Worcestershire) On the table in 45 minutes, as the onions take the longest. Hearty, full of flavor, and gobbled up with rave reviews!!! (I hate this 500 letter limit has anybody else complained?)

Balsamic Pork Tenderloin ~1-1 1/2 lb pork tenderloin Marinade: 1/2 C olive Oil, 1/4 C Balsamic Vinegar, 2 T Cider Vinegar, 2 T Honey, 3 Garlic Cloves, 1 T fresh rosemary, 1 T Dijon Mustard ~Mix marinade in blender. Place pork and half of marinade in zip-top bag overnight, turning occasionally. Preheat oven to 375°. Drain pork. Brown in iron skillet. Place in oven, roast about 25 mins. Slice thinly and serve. (Refrigerate remaining marinade for another use, such a roasted vegetables, meat.)
