Zucchini Quinoa Burgers - vegan and gluten free. I double the quantities of zucchini and quinoa, used 3 T Dijon, subbed sunflower seeds for pumpkin seeds. This made 9 1/2-cup burgers. The non-veg's loved them too!

Vegan Fajitas. I actually made this as a taco salad instead of using flour tortillas. I used crushed red pepper instead of cayenne. I did 2 cups veggie broth with 1 cup of water to cook the lentils & didn't use walnuts. Turned out great!
