We purchased our chicks when they were three days old from a local breeder/hatchery. They had several breeds available so we were able to pick and choose. We wanted breeds that would lay well but would also have enough meat to eat. We decided on Australorp, Golden Laced Wyandotte, and Silver Laced Wyandotte.

Speckled Sussex. "...great layers of tinted or light brown eggs - lay right through the coldest weather...fat-bodied and not prone to flying when mature, so...easily fenced. In England, they used to be THE standard table bird, before the modern Cornish Crosses came along...forage well and are economical eaters...friendly and easily handled...curious nature...camouflage from predators...tend to get more speckles after each molt, so get prettier with age."

Easter Egger from My Pet Chicken They are friendly, great layers of large blue and green eggs, and (rarely) white, creamy brown or even pinkish eggs. Their smaller body size makes them good in the heat, and their small pea comb means they do well in cold, too, because they are not as susceptible to frostbite.

Easter Egger Bantam - This variety of chicken can lay blue, green, pink, white or brown eggs (or any color in between).
Easter Egger - Cold-hardy, friendly layers of blue and green eggs. Ours are just all white, but they are the ones who lay the blue eggs!
Easter Egger Bantam. Non-purebred hybrid with blue egg gene. They are friendly, great layers of (blue, green, or pink) eggs. Temperature tolerant. Easter Eggers" are hybrids that carry the blue-egg gene. Because this is a hybrid variety (not a breed), even if you have a whole flock of them, you can often tell them apart because they come in so many different colors - which isn't always possible with other breeds/non-hybrid.
Chicken Breed Information - Ameraucana - The Ameraucana breed was derived from blue egg laying chickens, but they do not have the breeding problems inherent to Araucanas. In addition, rather than ear tufts, they have muffs and a beard, and are very hardy and sweet. They lay eggs in shades of blue, and even have blue (or "slate") legs. Less rare than Araucanas, they are still quite rare and only available through breeders at this time. They should not be confused with Easter Eggers, which can...
