The vibrantly coloured and intensely flavoured vegetables that are cooked alongside here seem only to underline this, offering their own brightness and brio, sunny in taste as well as mood.
Tasty. I love coriander so this got an extra topping of it, I also added mushrooms and sweet snap peas. The rice was a bit dry so I would add more marinade or add some coconut milk next time and see how that turns out
