Roasted broccoli! Put the broccoli on a cookie sheet. Toss with olive oil, lots of fresh garlic, kosher salt, and pepper. Roast in the oven 20 to 25 minutes, until “crisp-tender and the tips of some of the florets are browned.” When it’s done, zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (Optional) and 1/3 cup of freshly grated Parmesan cheese. You can also add 2 Tbs julienned fresh basil.

Specifically, she loves roasting vegetables at a high temperature until they caramelize. That’s the basic premise of most of her vegetable recipes in most of her cookbooks and that’s precisely what makes her broccoli recipe the best you’ve ever had. Normally, broccoli gets squishy when you cook it. Not this broccoli; it develops an amazing brown crust in spots. Then you toss it with lemon juice, lemon zest, and Parmesan cheese and you’re in heaven. Seriously, this recipe is so easy I can recite it without looking at the book. (Ok, I’m lying, I’m about to open the book just to double check….) You preheat the oven to 425. Take 4 to 5 pounds of broccoli (I just got two large bunches), cut into florets (but relatively big ones.) Here’s the key that she doesn’t mention in the recipe: dry them THOROUGHLY. That is, if you wash them. I saw an episode of Julia Child cooking with Jacques Pepin once when Pepin revealed he doesn’t wash a chicken before putting it in a hot oven: “The heat kills all the germs,” he said in his French accent. “If bacteria could survive that oven, it deserves to kill me.” By that logic, then, I didn’t wash my broccoli; I wanted it to get crispy and brown. If you’re nervous, though, just wash and dry it obsessively. Now, it’s easy. Put the broccoli on a cookie sheet. Toss with olive oil, salt and pepper. (She says 5 Tbs olive oil, 1 1/2 tsps kosher salt, 1/2 tsp fresh ground pepper, but I just eyeballed it.) Now add 4 garlic cloves that are peeled and sliced and toss them in too. Roast in the oven 20 to 25 minutes, until “crisp-tender and the tips of some of the florets are browned.” I shook the pan around a bit as it went, but not sure that’s necessary. When it’s done, take it out of the oven–and here’s where it gets really good–zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts (I left those out), and 1/3 cup of freshly grated Parmesan cheese. She also has you add 2 Tbs julienned fresh basil, but I left that out too. You won’t miss it: the magic combo of the crispy broccoli, the garlic, the lemon and the cheese will make this the best broccoli of your life. I guarantee it; you will go ga-ga over it. I’m so ga-ga over it that I would seriously consider a trip right now to the store just so I could make this for lunch. Broccoli for lunch? Daikon Fries. Low-carb and delicious. Delicious Daikon French Fries 2 pounds (907 grams) of Daikon radish, skinned and sliced into 1/4″ x 1/4″ strips (1/8″ x 1/8″ is even better for crisping them up) 2 Tbsp vinegar 4 cups (1 quart) peanut oil Place daikon radish and vinegar in saucepan and add 8 cups (1 quarts) of water and 2 tablespoons of salt. Bring to a boil over high heat. Boil for 10 minutes. Daikon should be fully tender, but not falling apart. Drain and spread on paper towel-lined rimmed baking sheet. Allow to dry for five minutes. Meanwhile, heat oil in 3-quart saucepan over medium- heat (about 7 on my stove top) to 400°F. Add 1/4 of fries to the oil (oil temperature should drop to around 360°F). Cook for 55 seconds, agitating occasionally with a metal slotted , then remove to second paper-towel lined rimmed baking sheet. Repeat with remaining potatoes (working in two more batches), allowing oil to return to 400°F after each addition. Allow potatoes to cool to room temperature, about 30 minutes. Continue with step 3, or for best results, freeze potatoes at least over night, or up to 2 months. Bring oil to 400°F over medium-high heat. Fry half of potatoes until crisp and light golden brown, about 3 1/2 minutes, adjusting heat to maintain at around 360°F. Drain in a bowl lined with paper towels and serve immediately with salt. Makes 2 pounds of fries, or about 6 servings. Per serving: 226 Cals.; 6 g Carbs.; 2 g Fiber; 4 g Net Carbs. ; 1g Protein; 23 g Fat

Spaghetti Squash Au Gratin -- Made this tonight and the flavor is really similar to potato hashbrown casserole. The squash is a little crunchier than potatoes, but all in all it was a success in this house. Easy to prepare which was a definite bonus :) ---review---This was excellent, though I added a little butter and subbed the sour cream with Greek yogurt, and added a little more cheese.. I didn't think it tasted like hash browns at all though.

These seasonings were overpowering! I also used fat free sour cream. It was about 2-3 weight watcher points. Great side dish or main dish!!

This colder weather has got me needing something warm in my belly! Since this soup is similar to eating tacos, it is great year round–not just when it is cold. Plus it’s low carb! Low Carb Taco Soup 1 pound ground beef (or turkey) 1 onion 2 garlic cloves 1 tablespoon cumin 1 teaspoon chili powder 8 ounces cream cheese 2 10-ounce cans of Rotel 2 cans of beef broth 1/2 cup heavy cream Brown one pound of ground beef, or ground turkey if you prefer. You can cook the meat in a separate skillet or the large pot you will need for the soup. Once the meat is brown, drain it and add in two minced garlic cloves and half a cup of onions. Stir those in and then add in your spices–one tablespoon of cumin and one teaspoon of chili powder. Let the spices soak in while you dice up an eight ounce block of cream cheese. Add in the cream cheese and use the back of a wooden spoon to mash it into the meat. You can use a metal or plastic spoon, but the cream cheese will not stick to the wooden spoon as much. Homemade Condiments (no sugar) Tomatoes – yep. Vinegar – seems fine. Sugar – wait, what? Even ketchup isn’t safe from the wrath of sugar. Think you have to ditch the bottle – the condiment bottle that is – in order to avoid these hidden sugars? Not a chance, especially if you have the baseline kitchen skills necessary to whip up some of these homemade alternatives. Read on for simple Primal recipes for ketchup, mayonnaise, mustard, barbeque sauce and almond butter. Enjoy! Ketchup There’s no need to give up ketchup if you can opt for this sugar-free (but no less delicious) 3-minute variety. 6 ounces tomato paste 2/3 cup apple cider vinegar 1/3 cup water 2 tbsp of your preferred sugar substitute (optional) 2 tbsp onions 2 cloves garlic 1 tsp salt 1/8 tsp ground allspice 1/8 tsp ground cloves 1/8 tsp pepper Combine ingredients in food processor and blend until the onion disappears. Spoon mixture into an airtight container and store in the refrigerator. Mayonnaise If using raw eggs in mayonnaise makes you nervous, try this recipe, which not only dramatically reduces the sugar content but also partially cooks the eggs! 2 large egg yolks 2 tbsp fresh lemon juice 2 tbsp water 1 tsp dry mustard 1 tsp salt 1 cup pure olive oil Heat the egg yolks, lemon juice, water, and sugar in a small skillet over very low heat, stirring constantly. At the first sign of thickness, remove from heat and submerge in a large pan of cold water (you should continue stirring here to avoid creating citrus-y scrambled eggs…trust us!) Scoop mixture out of pan and into a food processor. Blend for a few seconds and then let mixture sit uncovered for at least 5 minutes to cool. Add remaining dry ingredients, and blend on low speed. Drizzle oil slowly into the mixture until all ingredients are combined. Scoop into a large glass container and chill immediately. Mayonaise should keep for at least one week if stored correctly. Mustard Ahhh…mustard. Another childhood favorite. But did you know many varieties contain a hefty dose of brown sugar? Cut the carbs – and synthesize the taste – by following this spicy mustard recipe 1/4 cup white or brown mustard seeds 1/4 cup red wine vinegar 1/4 cup dry red wine 1/2 cup dry mustard 2 tsp salt 1/4 tsp ground allspice 2 tbsp cold water Place mustard seeds, wine vinegar and wine in a small bowl and let sit for 3 hours. Pour the contents of the bowl and the water into a food processor with a steel blade. Blend until seeds are broken up and then add the dry mustard, salt, allspice, and water, and process until smooth. Scoop into glass container and refrigerate 12 hours before serving. Faux Honey Mustard This is perhaps one of the most delicious (and kid-friendly) ways to sweeten the appeal of a chicken dish! 1 cup mayonnaise (extra credit if you use your own homemade version!) 1/3 cup mustard (again, there’s no harm in using your own!) 2 tbsp lemon juice 1 packet sugar substitute or a bit of honey Combine all ingredients in bowl and mix thoroughly. To store, refrigerate in airtight container. Barbeque Sauce Ever wonder what makes barbeque sauce so delicious? Perhaps it’s the 30 grams of sugar per 1/4 cup serving? Don’t want to give up this comfort food favorite? Then try this innovative recipe, which uses diet soda in place of the sugar! 2 strips of thick bacon, chopped fine or 1 teaspoon of smoked paprika, or chipotle powder to taste (this gives the sauce its smoky flavor, so using either the bacon or the spices is fine!) 1 small onion (minced) 1 clove garlic (minced) 1 6oz can tomato paste 1 tsp liquid smoke 1/2 cup apple cider vinegar 1/2 cup water 1/4 cup ketchup (again, use your homemade version!) 3 tbsp mustard 1 tbsp Worcestershire sauce 1 pinch ground cloves 1 pinch cinnamon Hot sauce to taste (any variety is fine!) If using bacon, fry in a 2-qt pan (no oil) until cooked through. Add the onion and cook over a medium heat for 3-5 minutes (or until onion browns). Add in garlic and cook for a minute, then mix in all other ingredients and simmer for about 30 minutes. Test the mixture and add other spices, more vinegar or hot sauce until you achieve the desired taste. To store, scoop into a large plastic container and keep refrigerated. Sugar Free BBQ Sauce: 2 strips BACON, chopped fine (OR 1-3 T liquid smoke) • 1 sm minced ONION • 1 clove minced GARLIC (OR ¼ t garlic pwdr) • 6 oz can TOMATO PASTE • 12 oz can DIET COLA • ¼ c sugar-free CATSUP, (OR 1 T Vinegar & Splenda to taste) • 3 T MUSTARD • 1 T WORCESTERSHIRE SAUCE • 1 pinch ground CLOVES • HOT SAUCE to taste ~ Fry bacon, then onion, then garlic. Add remaining ingred plus about ½ c water. Stir well. Simmer 20-30 min. to reduce. Adjust seasonings. Makes 10 ¼ c servings.
