Sprinkle Bakes' Sprinkle Cake recipe
Happy Birthday Sprinkle Cake "A casserole made for special occasions or year round use. The perfect size for baking potatoes or soufflés. Enameled cast iron heats quickly and retains heat beautifully. Limited lifetime warranty." * Can be used in the oven or on the stovetop *Enameled cast iron efficiently conducts and retains heat *Heavy, tight-fitting lid; knob on lid is ovenproof to 450 degrees F *Holds 2 quarts Also, 12 of you will get a special baked treat delivered to your doorstep! I wish I could tell you exactly what it is, but I will say that the recipe comes from my baking book that is due out next fall. So, consider it a sneak peek at things to come! (Contest entry form is at the bottom of this post.) To keep the mood festive, I've made birthday hats for the guests. They do not love this idea. Have you seen these enormous gummy bears yet? I laughed when I first saw them and said "Who on earth would buy that?!"...ahem. And then I walked out of the store with one. But hey, it makes a pretty cute cake topper! Sprinkles inside and out! Sprinkle Bakes' Sprinkle Cake [click for printable recipe] Serves 12-15 Sprinkle Cake: 2 1/4 cups all-purpose flour 1 1/2 cups sugar 1/2 cup butter, softened 1 1/4 cups buttermilk 3 1/2 teaspoons baking powder 1 teaspoon salt 1 tablespoon vanilla 3 eggs 3/4 cup rainbow sprinkles (I like the Marble Mix'ins variety found in the ice cream section) Preheat oven to 350 degrees. Grease the bottom and sides of two 9" (or three 8") pans and line with parchment paper. Grease parchment and set aside. In an electric mixer fitted with the paddle attachment, beat all ingredients together except rainbow sprinkles. Beat on high speed for 3 minutes, scraping down the bowl occasionally. When thoroughly mixed, gently fold in rainbow sprinkles. Stir only briefly, because the colors will begin to run quickly. Pour batter evenly into pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool on wire racks. Swiss Buttercream Frosting: 2 cups sugar 2/3 cup water 4 large egg whites 6 sticks of softened butter (yes, 6 sticks!) 1 teaspoon vanilla In a small saucepan over medium heat, dissolve the sugar in the water. Stirring constantly, bring mixture to a boil and cook until 240 degrees is reached on a candy thermometer. In the bowl of a stand mixer with the whisk attachment, beat the egg whites until they are foamy. While mixer is running, add the hot sugar syrup to the egg whites in a thin stream. Temper the mixture slowly and carefully. Switch whisk attachment for the paddle attachment, and add the softened butter, 1 tablespoon at a time. Frost cooled cakes with buttercream. Assembly: A variety of nonpareils, sprinkles, quins, sugar confetti and anything else you want to throw at this cake. Sprinkle to your heart's content! THIS CONTEST IS NOW CLOSED. THANKS TO ALL WHO ENTERED! Contest Rules To enter, you must be a follower or become a follower of Sprinkle Bakes. Leave your name and email address in the form below. Also, leave a comment and tell me about your favorite birthday cake! My favorite was a Mrs. PacMan cake that was made for my 9th Birthday. I still love looking at pictures of that cake! The deadline is October 6th and a winner will be chosen and announced October 7th. A little fine print for this contest: Contest is open to US and Canadian residents only. Email addresses are kept confidential. Winner will be selected by Sprinkle Bakes using Random.org. Winner will be notified via email and will have 24 hours to confirm receipt of the email. My favorite birthday cake was on my 16th birthday- I was traveling in Turkey with my mom and we were out at a cute little outdoor restaurant in Istanbul. My favorite birthday cake was the Seven Layer Cake from Weby's bakery. My dad and I would go to Weby's every Sunday morning and we would buy a sliced onion bread, cookies of some sort and a slice of seven layer cake. On my birthday, my dad would get a whole cake and most years I ate most of it myself!! My love for sweets started at a very young age. I miss my dad. Yet, now - on my birthday- my husband gets me a seven layer cake. I enjoy sharing this tradition and this memory with my three boys - whom all have a significant sweet tooth! I would have to say for me at 9 years old the "string cake" made a great hit. That's the cake ( I don't event remember the flavor) where you would tie little charms to strings that little hands could pull out of the cake after it was baked.Quite fun! My mom used to make me cakes for my birthday - I distinctly remember one in the shape of a reindeer, and his nose and eyes were buckeyes. Anymore, now, I make the cakes for myself and others. For my friend's birthday last year, since he likes the Big Lebowski, I made him two cakes in the shape of a bowling ball and pin. I made my mom a caramel macchiato cheesecake (my first) for her birthday this year. I can't really pick a favorite cake, but man... I try to be creative. I've had a lot of fun (and funny) birthday cake stories over the years, but I think my favorite was the year I made a Key Lime Cheesecake for a friend's daughter during a weekend festival that we held on our property out in the country. I had just finished putting the birthday greetings on top and was turning to show the gaggle of folks gathered in the kitchen how it turned out when the whole thing fairly FLEW across the kitchen and splattered at the feet of my friend! We never quite figured out why it happened, but we renamed that recipe "Kamikaze Cheesecake," and the name stuck over the years. Never had another one take the final leap since, but it sure made for fun memories that weekend. Oh, I replaced the cake with a carrot-pineapple-coconut cake, so the birthday girl didn't go without entirely. :) Happy birthday!! Hope you never have kamikaze confections in YOUR kitchen! Yummy goodness, like a Texas Sheet Cake which is a total sugar high, bliss. Love your Confetti cake & Biscuit! September 30, 2010 7:01 PM MerBella said... My favorite memory of my birthday and the cake I enjoyed was on my 10th year on this planet. I spent it with my beloved 94 year old grandmother on her patio on a warm, summery day. She had a delicate lemon custard tart special ordered from the local French bakery. It was so special and the sweetest memory to date!! September 30, 2010 7:02 PM Aisleen said... My favorite birthday cake is the one I get every year, made by my mom! She bakes me a chocolate cake with lemon curd filling and whipped cream frosting. I love it! And I love those star sprinkles, I was looking into buying those but they're all sold out everywhere. So cute! September 30, 2010 7:04 PM Amy L said... Funny, I can't remember any of the store bought ones for my b-day, but I always loved my mom's homemade cakes. My top 2: Mississippi Mud, and Sour Cream Chocolate cake. Typically I was a pretty good kid, but for whatever reason, I transformed into a little devil at my 5th birthday party. My sweet aunt who was a baker/cake decorator at the time made me a superb giant bunny coconut cake. At the time, I didn't think it was so great and refused to eat it - to my mother's horror. Unfortunately, I have no idea how it tasted, but I have pictures of that beautiful cake. My aunt must have forgotten my outburst and later taught me how to make all of her amazing cakes, fillings, icings. September 30, 2010 7:21 PM Pretty. Good. Food. said... When I was younger, my mom would ask me every year for my birthday what cake I wanted her to make. Every year my response was the same. Strawberry Shortcake! :) September 30, 2010 7:26 PM Beth said... Happy Birthday to Sprinkle Cakes & Hello to Biscuit! My favorite birthday cake was made by my Grandmother on my father's side. It was a made from scratch cherry cake with marshmallow frosting that my Grandmother baked in the coal stove where she did all her cooking until she died at the age of 101 back in 1985. That woman worked wonders with that stove. Thanks for such a great site & for helping to bring back the memories of that birthday cake and my Grandmother. September 30, 2010 7:35 PM Emily said... It's not technically a cake but when I was very young (like nursery school) we had to bring something in for everyone in the class on our birthday. There was a doughnut shop in my town that closed many years ago that made doughnuts on a stick dipped in chocolate candy coating. This was my absolute favorite thing to bring in for everyone on my birthday (and to eat) and I've never seen them for sale anywhere since. September 30, 2010 7:47 PM lisa b. said... There used to be a bakery (like Entenman's) in Chicago called that made a chocolate cake with vanilla buttercream and coconut all over it. My mom was a great baker, but I LOVED that cake! ***By the way, the winner should NOT be randomly chosen. My birthday was Sept 22 and it marked the end of 3 years of cancer treatment, surgery, and complications! I SOOOOOO deserve first prize! September 30, 2010 7:56 PM amalia said...
