Baked Mashed Potatoes:  2 eggs,  1/3 cup sour cream ( plus what will be used to put a dollop on top), #1 heaping cup grated cheese, 2-4 Tbl. parmesan cheese, chives,  salt & pepper to taste, 3 cups mashed potatoes.  Beat eggs, and add dour cream and blend,  add in remaining ingredients.  Butter bottom and sides of muffin tin.  Fill with mixture and bake at 400 degree oven 25 h 30 min.
