Sweet and spicy slow cooked pork sweetened with brown sugar, cola, chipotle chilies, green chilies, cumin and spices. Delicious over cilantro lime rice and black beans. This was a recipe request to make over Cafe Rio's sweet pork recipe, only problem is I've never eaten at Cafe Rio. After reading dozens of copycat recipes, I came up with my own lightened up version, which was a huge hit in my home. We had enough for several meals, and made a burrito bowl out of the leftovers with cilantro lime rice, black beans (recipe coming soon), pico de gallo, lettuce, avocado and a little low fat cheese. But this was also great served over rice. Sweet Pork Burrito Bowl The crock pot is parked on my counter lately, it's so helpful on the days I have to go in to work. What can beat coming home from work and smelling dinner just about ready! Since the marinade gets tossed after it cooks, I wasn't sure how to calculate, so I counted half the sugar and cola from the marinade just to be sure. Adjust the heat to your liking, this is medium heat, if you like it hot, add more chilies, if you prefer it mild, use less. Enjoy! Slow Cooked Sweet Barbacoa Pork Gina's Weight Watcher Recipes Servings: about 10 • Serving Size: 3 oz • Old Points: 4.5 pts • Points+: 5 pts Calories: 202.5 • Fat: 6.3 g • Protein: 26.2 g • Carb: 11.5 g • Fiber: 0.6 g Adapted from Favorite Family Recipes Ingredients: For the Marinade: 2.5 lbs pork loin roast, all fat trimmed salt and pepper garlic powder 6 oz Coke zero 1/4 cup brown sugar (unpacked) 1/4 cup water Step 2 8 oz Coke zero 6 oz can sliced green chilies 8 oz tomato sauce 1 chipotle chile in adobo sauce 1/8 tsp garlic powder 1/8 tsp cumin 1/8 tsp chipotle chili powder (to taste) salt and pepper to taste 1/3 cup brown sugar (unpacked) Directions: Season pork with salt, pepper and garlic powder and place in the crock pot. Add 6 oz of coke and 1/4 cup of brown sugar. Marinate refrigerated for a few hours or overnight turning meat at least once while marinating. Remove crock from refrigerator, add water, and cook on high for about 3-4 hours (or until it shreds easily). Remove pork from crock pot and discard any liquid left in the pot. Shred pork with two forks. Step two: In the crock pot, combine 8 oz coke, green chilies, tomato sauce, chipotle chile, garlic powder, cumin, chipotle chili powder and remaining brown sugar. Put shredded pork back in the crock pot and combine with sauce. Adjust salt and pepper to taste, cover and cook on high 1-1/2 hours more.

Place a Dutch Oven or large heavy pot on medium-high heat. Add 1 tbsp oil, when hot add the chicken and sear until browned on all sides, about 6-7 minutes on each side. Transfer chicken to a dish and set aside. Sauté garlic and onions (and red pepper flakes if using) in remaining oil; sauté until golden, about 3 minutes, stirring occasionally. Add celery and carrots and saute on medium-low for about 2-3 minutes, until soft. Add the wine and chicken broth, scraping any caramelized bits from the bottom with a wooden spoon. Add tomatoes, marjoram, reduce heat to low, adjust salt and pepper to taste and simmer for 30 minutes. Add the chicken and rosemary to the sauce, partially cover and cook slowly on low heat for another 25 - 30 minutes, stirring occasionally, adding water if needed. For the Crock pot: Start with the same directions as the first two paragraphs up to adding the wine and half of the chicken broth listed. Add the remaining ingredients to the crock pot and cook on low for 8 hours taking the lid off the last 30 minutes.

Pollo in Potacchio Braised chicken with rosemary, garlic and tomato sauce. The chicken slowly cooks until it's fork tender, a perfect dish to make on a lazy Sunday afternoon. My 2 year old gave it a thumbs up! I think this would be perfect served with pasta or polenta on the side, it's an inexpensive meal the whole family will love. I listed the nutritional info for one thigh, which is perfect if you have this with a side dish, but some may want two pieces so keep this in mind if you are serving a crowd. For those of you who don't own a Dutch oven, a heavy pot with a lid would work fine. I also think you can easily adjust this to work in your crock pot and I've included directions on how to make the adjustments. This recipe was inspired from my trip to DC. While there I had lunch at The National Gallery of Art at the Garden Café Italia... They have a really great buffet with an Italian menu developed by Chef Trabocchi. The buffet has an array of cured meats, served with artisan bread, Parmigiano-Reggiano cheese and marinated olives, salad, pasta, eggplant and chicken. Chicken Pot Pie Soup! -Skinnytaste This was really good. It took me a little longer to get all of the vegetables soft than what the recipe said, and I used chicken stock instead of the water (in place of the bouillon cubes). It turned out REALLY good. I served this with some toasted french bread. A very hearty dish (but HEALTHY) that would be perfect on a cool night. :)

Chicken Rollatini with Spinach alla Parmigiana Baked chicken breasts rolled with spinach and ricotta topped with pomodoro sauce and melted mozzarella. A dish the whole family will love! Since making chicken rollatini stuffed with prosciutto and cheesea few weeks back my husband has been craving chicken rollatini the way he grew up eating it, stuffed with cheese and topped with sauce and more cheese. I had to sneak some spinach in them against his will, but he was very pleased with the final results. I guess you can say this is a cross between my Chicken Parmigianaand Spinach Lasagna Rolls. Perfect for a large crowd, or to feed a hungry family. These are very filling, I served this with a big salad and I was very content with just one piece. These re-heated beautifully the next day and we were happy to enjoy them again for leftovers. Enjoy!! Chicken Rollatini with Spinach alla Parmigiana Gina's Weight Watcher Recipes Servings:8 • Serving Size:1 stuffed breast • Old Points:4 pts • Points+:5 pts Calories:194.7 • Fat:7 g • Protein: 24.2 g • Carb:7.2 g • Fiber:1.5 g 8 thin chicken cutlets, 3 oz each 1/2 cup whole wheat Italian seasoned breadcrumbs 1/4 cup grated parmesan cheese, divided 6 tablespoons egg whites or egg beaters 5 oz frozen spinach, squeezed dry of any liquid 6 tbsp part skim ricotta cheese 6 oz part skim mozzarella (I used Polly-O) olive oil non-stick spray (I use my Misto) 1 cup pomodoro sauce or your favorite marinara sauce salt and pepper to taste Washand drycutlets, season with salt and pepper. Preheatoven to 450°. Lightly spraya baking dish with non-stick spray. Combinebreadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another. Shredor finely chop1.5 oz of mozzarella cheese and combinewith remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese. Laychicken cutlets down on a working surface and spread2 tbsp of spinach-cheese mixture on each cutlet. Looselyroll each one and keep seam side down. Dipchicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeatwith the remaining chicken. When finished, lightlyspraywith olive oil. Bake25 minutes. Removefrom oven, topwith sauce then cheese. Bakeuntil cheese is melted and bubbling, about 3 more minutes. Serve with additional sauce on the side and grated cheese.
