Italian Chopped Salad- A BIG chopped salad loaded with salami, mozzarella, artichoke hearts, chickpeas, cucumber, plum tomatoes, red onion, little pasta rings and romaine lettuce tossed in a tangy Parmesan vinaigrette. Leave out the romaine and it makes a killer pasta salad, both absolutely delicious!
Roasted zucchini- slice thick rounds of zucchini. Mix together oil, lemon zest, little balsamic vinegar, dill, little Italian seasonings, salt, pepper and drizzle over zucchini.
