Chicken Enchiladas. My family's favorite enchilada recipe. Can use rotisserie chicken from grocery to cut time in half. Great recipe, minus the chipotle chiles and add a half of a packet of taco seasoning to enchilada sauce and just pour of enchiladas. No need to dip in sauce first.

Ingredients 1 baguette, cut into 1/4-inch-thick slices 2 tablespoons extra-virgin olive oil 1 8-ounce package cream cheese 4 ounces crumbled gorgonzola cheese 2 15-ounce cans sliced pears in juice, drained 1/2 cup candied pecans, chopped 2 tablespoons finely chopped fresh parsley Directions Preheat the oven to 400 degrees F. Lightly brush 1 side of each baguette slice with olive oil. Place the slices on a baking sheet and toast 5 to 7 minutes, or just until beginning to brown. Let cool. Meanwhile, in a small bowl, combine the cream cheese and gorgonzola cheese, stirring until well mixed. Spread the toasts with the cheese mixture. Top with the pear slices and chopped candied pecans. Sprinkle with the parsley.

Marmalade Meatballs- Sandra Lee, Food Network. Great (and easy) appetizer. I get raves whenever I make these.
Marmalade Meat Balls 2 pounds fully cooked frozen meatballs (recommended: Armanino) 1 bottle (16-ounce) catalina salad dressing 1 cup orange marmalade 3 tablespoons Worcestershire sauce 1/2 teaspoon red pepper flakes Directions Place frozen meatballs in the insert of a slow cooker. In a bowl, stir to combine the remaining ingredients. Pour over meatballs and stir to coat. Cook on high setting for 2 to 3 hours.

Baked Parmesan Crusted Chicken- Best baked chicken. Before baking, coat breasts in a mixture of dry bread crumbs, parmesan cheese, thyme, basil, oregano, salt, and pepper. Actually delicious with any kind of shredded cheese I happen to have around.
