Paula Deen Fried Dill Pickles - 1 24-ounce Jar Kosher dill pickle spears or slices 1 tsp garlic powder 1/2 cup Louisiana hot sauce (I like Texas Pete) 1/2 cup buttermilk 1 gal peanut oil 2 cups Uncle Bubba’s Fry Mix Directions Drain the juice from the pickle jar and refill the jar with the garlic powder, hot sauce, and buttermilk. Marinate the pickles for at least 30 minutes. In a Dutch oven over medium-high heat, heat the oil to 350 degrees F. Drain the pickles. Put the fry mix in a large mixing bowl, and toss the pickles to coat thoroughly. Shake off the excess mix by tossing lightly in a strainer and deep fry the pickles in batches for 3 to 5 minutes, depending on the size of the spears. When golden brown, remove the pickles from the oil with a clean strainer or slotted metal spoon and place on paper towels to drain off any excess oil. Serve immediately.

Thai Coconut Curry Soup - as my friend promised, this was very good! And, best of all, very easy to make. It was missing a "sweet" quality that I can't put my finger on, but something that differentiates it from the Thai food place I frequent. Who knows, maybe they simply add sugar to their recipe. I used TJ's light canned coconut milk, so that kept the calories and fat content low in this.

Thai Coconut Curry Soup - Chef Michael Smith Ingredients 2 cans (14-ounce/400 mL each)of premium coconut milk 1 heaping tablespoon (20 mL) of Thai curry paste the tender stems of 1 bunch of cilantro, rinsed well 2 chicken breasts, thinly sliced 2 cups (500 mL0 of chicken broth 1 carrot, shredded 4 or 5 lime leaves 2 stalks of lemon grass, halved lengthwise, woody leaves removed 2 tablespoons (30 mL) of fish sauce the zest and juice of 2 limes a small knob frozen ginger a handful bean sprouts a 8 ounce (225 g) package rice noodles 1 bunch of cilantro leaves, rinsed well 2 or 3 green onions, thinly sliced a sprinkle or two salt or soy sauce Procedure Scoop the thick coconut cream from the top of just one of the cans into a large stockpot set over a medium-high heat. Melt the cream, add the curry paste and stir for a few minutes until they begin to sizzle. Add the cilantro roots and chicken and sauté until the chicken is cooked through, about 5 minutes. Add the coconut juice from the first can and all the contents of the second can along with the chicken broth, carrot, lime leaves, lemon grass, fish sauce and lime zest and juice. Grate the frozen ginger into the broth with a Microplane grater or standard box grater. Simmer for 20 minutes or so. Stir in the bean sprouts. Add the rice noodles, gently pushing them beneath the surface of the broth. Turn off the heat and let stand until the noodles soften, about 5 minutes. Rice noodles don’t need to simmer like pasta to cook; they simply need to rehydrate in the hot liquid. Stir in most of the cilantro leaves. Remove the lemon grass stalks. Taste and season with a touch more salt (or soy sauce) as needed. Ladle into large bowls and garnish with the green onions and remaining cilantro leaves.

50.4KShare952Tweet9Email69Share53K MONDAY, 22 APRIL 2013 Gluten Free Flour Tortillas Greetings my fellow gluten feeders! I have for you today a new recipe for gluten free flour tortillas. They're pretty much the easiest form of bread to make in the whole wide world and they're great for everything from tacos and quesadillas to egg salad. Plus, unlike other gluten free tortillas, these do not break, crack, or crumble. First you just make your dough. I was making a double or quadruple batch or something here, so ignore the quantity. The dough should be soft, not sticky. Roll it out nice and thin on a surface lightly dusted with corn starch or tapioca flour. If you have one of these nifty lifter things, that's a plus. I think it's called a cake lifter, though I would never try lifting a cake with that. Your tortilla will now be thin and floppy. So you shall flop it right onto a hot, ungreased pan. Once it starts bubbling, flip it. Then when the other side has some nice brown spots, it's done. Now you have tortillas that are bendable... ...and tear just like a regular tortilla. I was gonna say they're tearable, but, well... that sounds terrible. Gluten Free Flour Tortillas Makes about 5 big tortialls 1/2 cup white rice flour 1/2 cup brown rice flour 1 cup tapioca flour 1 tablespoon white sugar 1/2 teaspoon baking powder 1/2 teaspoon salt 2 teaspoons xanthan gum 2 tablespoons shortening 3/4 cup water Mix together the rice flours, tapioca flour, white sugar, baking powder, salt, and xanthan gum. Mix in the shortening with your fingers until well combined. Add the water and mix well. If the mixture is still dry, add a little more water. Heat an ungreased skilled on medium-high heat. Roll out tortillas and cook each one on the hot pan until it begins to bubble. Then flip it and cook until the bottom has some brown spots. They're the best if you stack them on top of each other as they come out (this softens them up a bit). You can also throw a slightly damp towel over the top one. These keep pretty well in a plastic bag in the cupboard.
