This is my favorite salad right now; I could eat it all day...! California Quinoa Salad (Whole Foods copycat) I got all the ingredients at Trader Joe's. FYI, this makes ALOT, half the recipe feeds at least 8-12 people.
Grilled Ginger-Sesame Chicken Salad---LOVE THIS DRESSING! A sauce that doubles as a marinade and then turned into a salad dressing. I added cucumbers, carrots, avocado, green onions, and the chicken. Topped with chopped nuts. Used Trader Joe's Cruciferous Crunch. FANTASTIC! So crunchy. Will definitely make again.
No Rice Stuffed Bell Peppers - Since I'm a vegetarian, I'm substituted the meat with beefless beef (Trader Joe's) and used my own blend of seasoning for taste (Adobo con achiote, black pepper and garlic) - go easy on the cheese for a low-carb meal
Chili Lime Chicken Burgers... ground chicken (or turkey) with green onions, red bell pepper, cilantro, garlic, red pepper flakes, & lime juice. ((note to self: remember that combination and probably add cumin)) Serve with pepper jack cheese and guacamole on top.
LOVE this dish! And so easy to interchange veggies. I like a lot of flavor, so I nearly double the spices and also add red chili pepper flakes. Serve with a little chunk of Feta cheese and it's amazing! Great leftovers too, especially if you broil it again for a few minutes.
