Spicy Butternut Squash Skillet (Vegetarian) *1/2 butternut squash *1 cup of quinoa, cooked (=about 1 1/2-2 cups after cooking) *1/4 cup cilantro chopped *1/4 cup onion diced *2 cloves of garlic *2 tbsp extra virgin olive oil *sriracha to taste (I used about 1/4 cup) *1 cup of organic corn *1 cup of black beans * 1 tablespoon cumin * 1 tablespoon chile powder
fresh tomatoes handful fresh basil leaves ½ t salt ¼ clove garlic juice of ½ lemon a few tablespoons olive oil pepper to taste To make the dressing, combine the basil, salt and garlic in a pestle and mortar and pound until you have a relatively smooth paste. Add the lemon juice and olive oil.

I do an oil-free caprese salad with fresh locally made artisinal tofu. I don't do the lemon-and-salt treatment given here. I will have to try it. Omit the oil, of course. Good stuff! Vegan Caprese Salad
