Layered Summer Fruits with Creamy Lime Dressing Recipe INGREDIENTS: Creamy Lime Dressing 1 package (8 oz) cream cheese, softened 1/2 cup frozen limeade concentrate, thawed 1/4 cup powdered sugar 1 cup whipping cream, whipped Fruit 3 cups cut-up cantaloupe 1 quart strawberries, quartered 2 ripe medium mangoes, seed removed, peeled and cut up 2 cups blueberries 2 cups cut-up honeydew melon Mint leaves, if desired DIRECTIONS: 1. In medium bowl, beat cream cheese, limeade concentrate and powdered sugar with electric mixer on medium-high speed about 3 minutes or until smooth. Fold in whipped cream. Set aside. 2. In 3-quart trifle bowl, layer cantaloupe and strawberries. Spread half the cream cheese mixture over the strawberries. Layer mangoes, blueberries and honeydew over cream cheese mixture. Spread remaining cream cheese mixture on top. Garnish with mint leaves. 3. Serve immediately, or cover and refrigerate up to 2 hours before serving.

Greek yogurt and berry pops - 1 punnet or 250 grams of your favourite berries 2 tbsp of caster sugar juice of half a lemon or lime 1 small tub of natural, thick Greek yoghurt 2 tbsps of honey Mix well your berries, sugar and juice. Place in the refrigerator for at least two hours. Remove the macerated berries from the fridge and mix well. Add this to the Greek yoghurt, give it another quick mix and place mixture into ice cream moulds. Freeze for a minimum of 4-5 or overnight.

Allow to cool and puree) 2 eggs (or egg re-placer for vegans) 1⁄2 cup of organic chopped spinach 1⁄2 cup of organic chopped red pepper 1/2 cup fresh chopped organic basil 3 teaspoons of baking powder 1/2 tsp sea salt 1/4 cup organic raw pumpkin seeds (optional) How to do 1. Preheat oven to 375°F. 2. Combine the dry ingredients. Combine the wet ingredients (I lightly beat my eggs). 3. Mix everything together, folding in the veggies. Spoon into muffin tins that have been sprayed with a little olive oil. The batter is very thick so don’t be alarmed or go adding any liquid or anything. 4. Sprinkle pumpkin seeds on top of unbaked muffins. Bake for 21-25 minutes in muffin tins.
