The Driskill Hotel, completed in 1886, is the oldest operating hotel in Austin, Texas. It was built by Colonel Jesse Driskill, a cattleman who spent his fortune constructing the hotel for $400,000. In 1887, Governor Sul Ross held his inaugural ball in its ballroom, beginning a tradition for every Texas governor since. While there, be sure and stop in at the 1886 Café & Bakery for a bowl of Helen Corbitt’s Cheese Soup. Helen served as Culinary Director of The Driskill in the late 1950’s.
