Lasagne Rollata al Forno from Food.com recipe must try! ingredients: Servings: 8 Units: US | Metric Five Cheese Marinara Sauce 2 cups marinara sauce 2 cups alfredo sauce 1/2 cup ricotta cheese 1 cup italian blend shredded cheese 1/4 cup red wine Filling 1 egg 15 ounces whole milk ricotta cheese 1 (8 ounce) mozzarella cheese , grated 1/2 cup parmesan cheese , grated 1/2 cup asiago cheese , grated 1/2 cup Romano cheese , grated 1 tablespoon Italian seasoning , blend salt and pepper , to taste Noodles 1 lb lasagna noodle 1/2 cup Italian breadcrumbs Directions: 1 Blend first two marinara ingredients together in a large saucepan. Add remaining ingredients and heat on medium, stirring frequently. The cheese will melt and the sauce will become creamy. Keep warm. 2 Set aside 1/4 of mozzarella cheese. Beat egg into a large mixing bowl and add all remaining ingredients, blending well. Keep refrigerated until you are ready to use. 3 Cook lasagna exactly according to package directions. Drain and rinse immediately with cold water so they are cool enough to handle. 4 When ready to make, spread about 1/4 cup of marinara sauce in a large 9x13 baking dish. Lay one lasagna noodle in baking dish and spread with filling along noodle. Loosely roll the noodle up, jelly-roll style. 5 Continue with each lasagna noodle until all noodles are rolled and arranged in baking dish. Cover each roll with remaining sauce, the remaining mozzarella cheese and top with Italian breadcrumbs. 6 Bake in preheated oven at 350 degree for about 35 minutes. Sweet Potato Cauliflower Soup yield: 6 to 8 servings 1 large head cauliflower (the one I used was at least 7″ in diameter olive oil for drizzling Few dashes garam masala (optional) 3 medium to large sized peeled sweet potatoes, cut into 1″ pieces 1 sweet onion, diced 2 cloves garlic 7 cups filtered water First, preheat your oven to 400 °F and cut up your cauliflower into bite sized pieces. Sprinkle cauliflower lightly with garam masala. Place cauliflower onto ungreased cookie sheet and lightly drizzle with olive oil. Place in oven and let roast until golden brown on the tops and tender, but not mushy, about 20-30 minutes. There’s no need to flip ‘em. Just remove from oven and let cool while you cook the rest of the soup. In large stockpot, bring sweet potato, onion, garlic and water to a boil. Salt (abt 3/4 tsp) and stir. Reduce heat and allow to remain at a constant simmer until sweet potatoes are tender. Add in cooked cauliflower and divide soup into 2 parts. Let soup cool and then blend one part soup in blender until very smooth. Combine with second part soup and stir. Salt to taste and warm up over stovetop if needed.

CROCK POT CHICKEN PARMESAN recipe from: Siggy Spice 2-4 boneless, skinless chicken breast halves 1/2 cup Italian Seasoned Bread Crumbs 1/4 cup Parmesan Cheese 1/4 t black pepper 1/4 t kosher salt 1 TBSP olive oil 1 egg, beaten sliced or shredded mozzarella cheese favorite jarred marinara sauce Spread the 1 TBSP of olive oil into the bottom of your crockpot stoneware insert. Beat the egg with a fork in a separate bowl. Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish. Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings. Place the chicken breast pieces in the bottom of the crockpot. Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like. Cover chicken and cheese with entire jar of marinara sauce.
