The Country Cook: Boston Cream Poke Cake. Super-Easy and Super-Yummy. Satisfies the Boston Cream craving, without all of the work of making one from scratch. Morgan doesn't usually eat much cake, but she ate a slice of this every day for a week!

Photo: MUFFIN PAN MEATLOAF    1 lb. ground beef  1 onion, chopped  1 tsp. salt  1 c. bread crumbs  1 can vegetable soup  1 egg    Mix all ingredients, put into muffin pans. Bake at 450 degrees for 15 minutes.

Make meatloaf in a muffin pan- it cooks in 15 minutes! (Thank you Rachel Ray). Then 'frost' them with mashed potatoes. I'd like to "skinny" up this recipe but I LOVE the idea of portion control in the muffin tin!

Crockpot honey chicken - this looks DELICIOUS and the chick that wrote it is pretty funny.   :)  I am definitely going to make this.
