Eggplant Tomato Pie. Butter 13x9 casserole dish. Peel and dice eggplant. Add diced onion and garlic, salt & pepper to large bowl. Mix with olive oil to coat lightly. Roast on parchment paper @ 350 for approx 30 min stirring about every ten. Step 2. Follow recipe but add some good parmesean cheese to the eggplant mixture. Step 3. Add Italian blend shredded cheese & fresh basil prior to baking.
