These are absolutely amazing! Be prepared to have a lot of potato scraps left over from cutting them into rectangles but it's worth it! Make country fried potatoes for breakfast tomorrow with the pieces-parts you don't use.
Martha Stewart's roasted potato stacks made in muffin tins. Mine didn't turn out nearly as pretty (my potato immediately started turning orangish color from exposure to air) BUT they were really delicious. I used a mandolin to get even, thin slices and cooked mine in ramekins since the potato slices were larger than a muffin tin base. I will definitely make these again: the family loved them!
