Chicken Enchiladas Recipe Recipe Type: Entree Author: America’s Test Kitchen Healthy Family Cookbook Prep time: 30 mins Cook time: 15 mins Total time: 45 mins Serves: 6 Tasty chicken enchiladas with 2 kinds of cheese. Can be prepared up to 2 days ahead of time for a quick and easy meal. Ingredients 1 lb. boneless, skinless chicken breasts trimmed & pounded if necessary Salt & pepper 2 1/2 cups of enchilada sauce (store bought or from scratch) 1 cup finely crumbled queso fresco or feta cheese 1 (4 oz.) can of green chiles 1/2 cup minced fresh cilantro 12 (6-inch) soft corn tortillas Vegetable oil spray (or you can use vegetable oil in a little bowl with a brush) 1 cup shredded cheddar cheese Lime wedges (optional) Sour cream (optional) Instructions Preheat oven to 350. Pat chicken dry and season with salt and pepper. Combine the chicken and enchilada sauce in a medium saucepan & simmer for 10-15 minutes over medium-low heat. Then flip the chicken over, cover and cook for an additional 10-15 minutes until chicken reaches 160-165 degrees with an instant-read thermometer. Remove chicken from pan and shred into bite-sized pieces. Combine shredded chicken, 1/2 cup of the enchilada sauce, queso fresco, chiles and cilantro in a bowl. Add salt and pepper if desired. Cover to keep warm. Lightly coat both sides of 6 tortillas with vegetable oil and place on a baking sheet. Bake until tortillas are soft & pliable, about 2 to 4 minutes. Quickly place tortillas on a flat surface and place 1/3 cup of the chicken mixture into each one. Tightly roll each tortilla around the chicken and place in a 9×13 baking dish. Repeat steps 4 and 5 for the remaining 6 tortillas. Increase oven temperature to 450 degrees. Pour 1 more cup of enchilada sauce over the tortillas and sprinkle with the cheddar cheese. Cover with foil and bake for about 10 minutes. Remove foil and bake an additional 3 to 5 minutes to melt the cheese. Serve with remaining enchilada sauce, optional lime wedges and optional sour cream. Serving size: 2 enchiladas Calories: 420 Fat: 16 g Saturated fat: 8 g Carbohydrates: 40 g Fiber: 5 g Protein: 29 g Cholestrol: 80 mg Notes To make ahead, complete through step 5, cover with plastic wrap and place in fridge for up to 2 days. Salmon-and-Spinach Cakes • 1 1/2 pound large Yukon Gold potatoes • 5 ounces fresh baby spinach • 1/2 cup mayonnaise • 1 jalapeno, seeded and minced • 3 tablespoons chopped fresh dill, plus additional for garnish • Salt • 1 1/2 pounds skinless salmon fillet, cut into 1/2-inch pieces • 1/4 cup plus 2 tablespoons heavy cream • 1/4 cup minced onion • Vegetable oil, for frying 1. In a medium saucepan, cover the potatoes with water. Simmer over moderately high heat until tender, about 30 minutes. Drain and let cool. Peel the potatoes and cut them into 1/4-inch dice. Transfer to a large bowl. 2. Meanwhile, in a large skillet, heat 2 tablespoons of water over moderately high heat. Add the spinach in batches; cook until wilted. Drain, squeeze dry, and coarsely chop. 3. In a small bowl, mix the mayonnaise, the jalapeno, and the chopped dill; season with salt. 4. Put the salmon in a food processor and pulse a few times, until chopped. Pulse in the cream until incorporated. Add the salmon to the potatoes. Stir in the spinach and onion and season with salt. Form the mixture into 12 patties. 5. In a large non-stick skillet, heat 1/8-inch of oil. Add half of the cakes and fry over high heat until lightly browned on the bottom, 1 minute. Reduce the heat to moderately high and cook until well-browned, about 2 minutes. Turn and cook for another 3 minutes, until browned. Repeat with the remaining cakes, adding more oil to the skillet as needed. Garnish the salmon cakes with the dill sprigs and serve with the sauce.

Crock Pot Santa Fe Chicken (Weight Watchers) 24 oz (1 1/2) lbs chicken breast 14.4 oz can diced tomatoes with mild green chilies 15 oz can black beans 8 oz frozen corn 1/4 cup chopped fresh cilantro 14.4 oz can fat free chicken broth 3 scallions, chopped 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin 1 tsp cayenne pepper (to taste) salt to taste Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice.
