Bacon, Ranch & Chicken Mac & Cheese - crock pot version: I threw 6 pieces cut-up cooked bacon, 3 big chicken breasts, 2 TB butter, 2 TB flour, 3 cups milk, 1 can cream of chicken soup, a few handfuls of cheese (we love cheese!), 2 tsps each of onion powder, garlic powder, dill weed, & salt. Cook it in the crock pot until chicken is done then shred chicken. Add 16 oz. box of cooked elbow noodles at the end.

Baked zucchini fries and bloomin onion dipping sauce. (Substitute non-fat greek yogurt for the mayo.) Dip 1 tablespoon butter 1 medium sweet onion, about 1/2 pound, peeled and sliced 2 tablespoons cider vinegar 2 tablespoons honey 1 tablespoon prepared mustard 1 cup mayonnaise salt and pepper to taste Zucchini sticks 3 medium zucchini, unpeeled, cut into 3"-long stick 1 tablespoon salt 1 cup coarse, dry bread crumbs (e.g., panko) scant 1/2 cup freshly grated Parmesan cheese 1 tablespoon Pizza Seasoning or mixed Italian herbs olive oil spray 1/2 cup egg substitute; or 2 large eggs; or 3 egg whites, lightly beaten Directions 1) To make the dip: Melt the butter in a medium frying pan over moderate heat, and add the sliced onions. Cook, stirring occasionally, until the onions soften, then caramelize. This should take between 10 and 15 minutes. The lower the heat, the longer it takes, but the less likely you are to burn the onions. 2) Once the onions are a medium brown, remove from the heat and add the vinegar. 3) Place the onions and vinegar into a small food processor. Add the honey and mustard, and process or blend until smooth. 4) Add the mayonnaise and salt and pepper to taste, stirring to combine. Refrigerate, covered, until ready to serve. 5) To make the zucchini sticks: Place the zucchini sticks in a colander over a bowl and sprinkle with the tablespoon of salt. Let the zucchini drain for 1 hour or longer; rinse and pat dry. 6) Combine the Panko, Parmesan, and pizza seasoning; set aside. 7) Preheat the oven to 425°F. Line a baking sheet with parchment, and spray the parchment with olive oil. 8) Dredge sticks a few at a time in the egg, then roll in the crumb mixture. Place the sticks on the prepared baking sheet. 9) Bake sticks for 12 minutes, turn over, and bake for an additional 8 minutes, until golden brown and crisp. 10) Serve immediately, with sweet onion dip. Yield: about 3 dozen zucchini sticks, and 1 1/2 cups dip.

I'm tellin' you, this cake is good enough to make you sass your grandma (and we all know you won't get away with that without some serious discipline from your mama, right?) I found this in an older Southern Living, and so glad I did! Pecan Pie Cake It's best to make the filling the night before, because you want this to chill really well. So I'll start with that first... Pecan Pie Filling 1/2 cup firmly packed dark brown sugar 3/4 cup dark corn syrup 1/3 cup cornstarch 4 egg yolks 1 1/2 cups half-and-half 1/8 tsp salt 3 TBSP butter 1 teaspoon vanilla extract (the real stuff) Whisk together the first 6 ingredients in a heavy 3-quart saucepan until smooth. Bring to a boil over medium heat, whisking constantly, and boil for 1 minute, or until thickened. Remove from heat; whisk in butter and vanilla. Place a sheet of wax paper directly on surface of mixture to prevent a film from forming, and chill at least 4 hours. Now for the cake.... Pecan Pie Cake 3 cups finely chopped pecans, toasted and divided 1/2 cup butter or margarine, softened 1/2 cup shortening 2 cups sugar 5 large eggs, separated 1 TBSP vanilla extract 2 cups all-purpose flour 1 tsp. baking soda 1 cup buttermilk 3/4 cup dark corn syrup Sprinkle 2 cups pecans evenly into 3 generously buttered 9-inch round cake pans; shake to coat bottoms and sides of pans. Beat butter and shortening at medium speed with an electric mixer until fluffy, and gradually add sugar, beating well. Add egg yolks, 1 at a time, beating just until blended after each addition. Stir in vanilla. Combine flour and baking soda. Add to butter mixture alternating with the buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in remaining 1 cup pecans. Beat egg whites at medium speed until stiff peaks form, and fold one third egg whites into batter. Fold in remaining egg whites. (Do NOT over mix). Pour batter into prepared pans. Bake at 350 for about 20-25 minutes. I always set timer to go off 5 minutes before to be safe. Silly oven! Check for doneness with the old toothpick inserted into center test. Cool in pans on wire racks for about 10 minutes, then invert onto the wire racks. Put some wax paper down under the wire racks... Trust me! You'll be glad you did! Brush the tops and sides of layers with corn syrup, and cool completely. (See, aren't you glad you listened?) Spread half of pecan pie filling on one layer, pecan side up. Place second layer, pecan side up, on filling, and spread with remaining filling. Top with remaining layer, pecan side up. Tip: Don't Make Pecan Cake When Its Raining!....
2 Ingredient Cake: Combine 1 box Angel Food cake mix and 1 can of fruit pie filling. Bake in an ungreased 9x13 pan at 350 for 28-30 minutes. Top with Cool Whip or whipped cream.

Mini German Pancakes. So easy! 1 cup milk, 6 eggs, 1 cup flour, 1/2 tsp. salt, 1 tsp. vanilla, 1/4 cup butter, melted. Preheat oven to 400 degrees. Blend first five ingredients in a blender. Be sure to smooth out any flour lumps. -Blend in butter a little at a time. -Grease muffin tins well and fill slightly less than half-full. -Bake for 15 minutes, or until puffy and golden on top. The crater will form on its own. -Add your favorite toppings. Perfect for christmas morning!

Grease muffin tins well and distribute batter evenly between 24 tins (I did more like 18. Gimme Some Oven’s tins were slightly less than half-full. I used a 1/4 cup measuring cup and filled it almost full.) Bake for 15 minutes, or until puffy and golden on top. 4. Served with your favorite toppings. (Mine was a dusting of powdered sugar and triple berry sauce. I have other suggestions up top)
