The Garden Grazer: Quinoa Vegetable Salad with Lemon-Basil Dressing. This makes enough for 8-10 as a side. I served it at room temperature. Only had a red bell pepper and it was tasty. Had vine ripened tomatoes, not Roma, so just seeded and chopped them and it was fine. A mild, but tasty side dish. This was really good three days later. I added a teaspoon more of olive oil, lemon juiced mixed with some chopped fresh basil to snaz it up, which worked well.

Easy potato skins 4 lg baking potatoes 3 TB butter, melted 2 tsps salt 1 1/2- 2 c cheddar cheese 7 slices cooked bacon or 1/2 c bacon bits Pre-heat oven to 400°. Foil cover a baking sheet & spray with non-stick spray. Wash potatoes and cut ends off. Cut potatoes into 1/2 inch slices, brush with butter and sprinkle with salt. Bake for 30 to 40 minutes. Turn potatoes after 15 minutes. Top with cheese, bacon and green onions. Continue baking for 3-5 minutes. Top with sour cream.
