Soup Tuesday: Fiskisúpa, Icelandic Fish Soup - The Reykjavik Grapevine

The Icelandic Lamb soup (kjotsupa) is a beloved dish from traditional Icelandic cuisine and culture. The Icelandic lamb is known for its flavor and quality; the result of a pure breed and grassing outdoors. Every household has their own recipe, and the combination of lamb on the bone and root vegetables make for a flavorful, nourishing meal. Some Icelanders argue, that the longer it is simmering, the better. That is why it often stirs for days, getting better and better as comfort food.

Homemade Icelandic Skyr. I have such fond memories of having this for breakfast when I visited Iceland as an undergrad... We stayed with families for 4 or 5 days and had this every morning. Excited to find a blog post on how to try it at home.
