This jalapeno popper grilled cheese sandwich will knock your socks off because of amazingness and spiciness. Note to self: next time, roast the peppers the full 14 minutes. Use more cream cheese, too.

Jalapeno popper grilled cheese sandwich- this looks good :) 2 jalapeno peppers, cut in half lengthwise and seeded 2 slices sour dough bread 1 tablespoon butter, room temperature 1 tablespoon cream cheese, room temperature 1/4 cup jack and cheddar cheese, shredded 1 tablespoon tortilla chips, crumbled 1.Place the peppers on a baking sheet with the cut side facing down. 2.Place the baking sheet on the top shelf in the oven and broil until the outer layer of the skin has blackened, about 8-14 minutes. 3.Place the peppers in a zip-lock bag or other sealable container, seal and let them cool until you can handle them, about 20 minutes. 4.Remove the skins from the peppers. The skins should easily "pinch" off. 5.Assemble sandwich and grill until golden brown and the cheese has melted, about 2-3 minutes per side.

5 STARS! Crispy Parmesan Asparagus Sticks. Changes: Because I wanted to cut carbs I did not use flour or breadcrumbs in mine. I melted butter and added sea salt/cracked pepper in a baggie and tossed the asparagus. When they were coated, I simply rolled them in the parmesan cheese. I cook almost all my veggies in my NuWave (which I LOVE!!!) because it makes them crispy. GREAT SIDE DISH AND LOW CARB!

*White Chicken Lasagna* ❄ 1 box lasagna noodles; ½c butter; 1 onion, minced; 1-2 cloves minced garlic; ½c flour; ½ tsp salt; pepper, to taste; 3c chicken broth; 2c skim; 4c mozzarella cheese, divided; 1c shredded or grated Parmesan cheese, divided; 1 tsp basil; 1 tsp oregano; 1c part-skim ricotta cheese; 1½c cooked & shredded chicken; 1 small box frozen spinach, thawed, drained & liquid squeezed out; 1 small box frozen butternut squash puree, thawed

Recipe: White Chicken Lasagna (adapted from allrecipes) lasagna noodles (I used no-bake noodles – about one and a half boxes.) 1/2 c. butter 1 onion, minced 2 cloves garlic, minced 1/2 c. flour 1/2 tsp. salt ground black pepper, to taste 2 c. chicken broth 2 c. nonfat milk (Trust me, the white sauce was totally creamy!) 4 c. mozzarella cheese, divided (I didn’t actually measure out my cheeses… just use what looks good to you!) 1 c. shredded or grated Parmesan cheese, divided 1 tsp. basil 1 tsp. oregano 1 c. part-skim ricotta cheese 1 1/2 c. cooked and shredded chicken 1 small box frozen spinach, thawed and drained; liquid squeezed out 1 small box frozen butternut squash puree, thawed Melt butter in a large saucepot. Add onions and garlic and cook over medium heat until translucent. Add flour, salt, and pepper. Cook flour mixture 1-2 minutes. Add chicken broth and milk. Bring to a boil; cook and stir 1 minute. Turn off heat and add 2 cups mozzarella cheese and 1/4 c. Parmesan cheese. Stir in dried spices. Lightly spray a 9×13″ baking dish with nonstick cooking spray. Ladle some cheese sauce onto the bottom to thinly cover. Add a layer of lasagna noodles. Layer with more cheese sauce, the chicken, and the ricotta cheese. Add another layer of pasta. Top with cheese sauce, spinach, and 1 c. mozzarella cheese. Add another layer of pasta. Top with cheese sauce. Using a spoon, spread the butternut squash puree over the cheese sauce. Top with remaining 1 c. mozzarella cheese and 1/2 c. Parmesan cheese. Add final layer of lasagna. Top with remaining cheese sauce and sprinkle with Parmesan cheese. Cover with foil and bake at 350 degrees for 20 minutes. Remove foil and continue to cook until bubbly. If cheese doesn’t brown on top, turn on the broiler for the last couple minutes. Allow lasagna to sit about 15 minutes before serving for easier slicing.

Spinach & Brie Puff Pastries Ingredients (makes 4 puffs): 1 cup fresh spinach, chopped 4 thin slices Brie (or more) 1 egg beaten 1/4 teaspoon freshly grated nutmeg 1 puff pastry, thawed if frozen Salt and pepper, to taste sesame and poppy seeds for decoration Preheat the oven 350ºF (180ºC). Line a baking sheet with parchment paper. Put the spinach in a bowl; stir in half the beaten egg and the nutmeg. Season to taste with salt and pepper. Roll out the pastry on a floured surface into a rectangle (16 x 8 in / 40 x 20 cm) and trim the edges. Lightly flour the top of the pastry and cut the rectangle into 4 pieces, each about 4in (10 cm) wide and 8in (20 cm) tall. Cut 1 in (2.5 cm) thick wide strips diagonally on both sides of the pastry, leaving the center intact. Try to cut an equal number of strips on both sides. Lay pastries out on a baking sheet lined with parchment paper. Divide the spinach equally between the squares, in the center, top it with brie slices then braid by crossing the strips over the filling alternating from side to side. mm. this looks good. Chicken Parmesan Wraps. Healthy & delish! Just made these... followed the recipe as is and they turned out really good. I had trouble finding the egg roll wrappers at the store (for those of you who shop at Kroger- I finally found them in the organic foods aisle next to the tofu) but other than that no problems. The cheese melts all into the wrapper and they are nom nom nom :)

This recipe is called cookies in a cloud. It is the one my friends always request me to make. Layer a 9x13 pan with chocolate chip cookies. Mix an 8 oz package of cream cheese, 1/2 cup of sugar and 1 egg and layer on top of cookies. Add another cookie layer on top of the cream cheese layer. Bake in the oven at 350 until the cookies are done.
