Its been a busy January for sure and had the pleasure of having my mom and aunt visiting me for a few weeks. They flew back today after a nerve wrecking bag check-in at LAX.Back to cooking now! Sunday evening steak and eggs! 6 minute eggs and a pan seared sirloin steak rare and bloody. I tried a little trick boiling eggs this evening. I added about a Tbsp of vinegar to the water. The last of my Christmas Hallacas dressed with some thai chili sauce. I still have plenty of frozen meat filling for empanadas and tacos to last me a few months but further hallaca confection will have to wait until next Christmas time. Ive been away from my insta recently. Just trying to catch up with home stuff before I dive back in the kitchen for the rest of this year. Happy Thursday guys!

Its the easiest thing in the world. I used Julias spices dry chiles. That brand is pretty easy to find around here but you could use any brand or even fresh chiles. If you work with fresh chiles you can roast them in the oven or oven a gas stove to intensify the flavor by removing water and some charring adds character. You…
