If I could only have one type of food for the rest of my life - I would chose Indian - hands down. In another life, when I actually LIKE cooking, I'm going to prepare lots of delicious Indian dishes. In the meantime, thank God for Indian restaurants.

Fenugreek ( /ˈfɛnjʉɡriːk/; Trigonella foenum-graecum) is a plant in the family Fabaceae. Fenugreek is used both as a herb (the leaves) and as a spice (the seed). The leaves, known as methi in Hindi/Urdu/मेथीHindi/Nepali), are also eaten as vegetables. A common ingredient in dishes from the Indian Subcontinent. The cuboid yellow to amber coloured fenugreek seeds are frequently used in the preparation of pickles, vegetable dishes, daals and spice mixes encountered in the subcontinent cusine.
Many of Madhur Jaffrey's books have an Indian slant, but she's most famous for her 1999 tome Madhur Jaffrey's World Vegetarian. While she often follows the Indian tradition of serving several small dishes together, the lentil-vegetable curry here is a Western-style main course. Eaten over rice with yogurt, it's a very satisfying meal.
