Chocolate Peanut Butter Brownie Bites - 5 stars - Delicious!!! Didn't use chocolate chips, only used a few pb chips for each bc they were very rich. Baked for 15-16 min.

Peanut Butter Cup Brownies Recipe adapted from Nestle’s Very Best Baking Makes 40 brownies as adapted 1 box of your favorite brownie mix 1/2 cup peanut butter chips 1/2 cup semi-sweet chocolate chips 3/4 cup creamy peanut butter Preheat oven to 350 degrees. Spray or grease 40 mini-muffin cups. Prepare boxed brownie mix as directed. Spoon batter evenly into muffin cups (about 1 heaping teaspoon). Bake for 13-15 minutes or until top is set and a toothpick inserted into center comes out slightly wet. After brownies are out of the oven, wait for centers to fall. This will happen upon cooling. If not then tap the centers with the back of a teaspoon to make a hole for the peanut butter. Place peanut butter in a small microwave-safe bowl. Microwave on high for 45 seconds then stir. While brownies are still warm spoon about half a teaspoon of peanut butter into the center of each brownie. Top with semi-sweet chocolate chips and peanut butter chips. Cool completely in pan.

Strawberry Margarita Jell-O Shooters September 23rd, 2010 § 30 Margarita Jell-O Shooters ~ A fun farewell to summer and a festive edition to your Sunday football tailgate party or gatherings. Strawberry Margarita Jello Shooters Strawberry Margarita Jello Shooters As many of you know, my Lemon Drop Jell-O Shooters are my issued dish from my girlfriend who holds the annual tailgate kickoff amongst our friends. This year with Matt being in the hospital, I sent them forward to the gathering in our absence. Now that we can finally make the next one in two weeks, she has again requested Jell-O shooters. But who wants to repeat a dish back-to-back, that’s like wearing the same dress to two functions that have the essentially the same invitees. That being the case, I opted to try what you see here. Somewhere there is someone screaming at my blasphemous mash-up of a cocktail with Jell-o. And my response . . . stop being so uptight. Food is fun and I love messing around with it. Besides how cute and fun are these? A few notes: I will be posting the how-to picture over the weekend. Sorry, I have to process them still. Use the real Jell-o mix and not a store brand, as the store brands tend not to set up as firmly. Choose the freshest strawberries you can find. You can use a strawberry huller or an apple corer along with a melon baller to empty out the strawberry. I used the latter method because it allowed me to dig a deeper well. These are best made the night before and served the next day. Fill your strawberries as high as possible, as the Jell-O will sink a bit in the middle. Strawberry Margarita Jell-O Shooters Yields 24-30 Strawberry Margarite Jello Shooters Strawberry Margarita Jello Shooters 21 Strawberry Margarita Jell O Shooters Strawberry Prep: Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom. Use a huller or apple corer to empty out the strawberry. Once the strawberries have been emptied, use a towel to pat the outside of the strawberries dry. Check each strawberry and make sure there is not a hole in the bottom before you start filling. Margarita Mix 1 box Strawberry Jell-O 8 ounces tequila, preferably reposado or blanco 6 ounce Cointreau Salt for garnish Instructions Boil one cup of hot water in a saucepan, then add in Jell-o powder and whisk until powder is completely dissolved, about 2 minutes. Set aside. Measure out 1/4 cup of cold water and set aside. Combine tequila and Cointreau, in cocktail shaker filled with ice. Add liquour mixture to cold water and stir to combine. Then add cold liquour mixture to hot Jell-o mixture and stir to combine. Pour final Jell-o mix into strawberries and chill overnight. Dip your finger in water or use a moistened brush to wet the edge of the strawberries, dip and rotate the strawberries in salt to rim. Garnish with cut lime triangles to finish.

Tiramisu Cupcakes- The creator of this cupcake stated "while I would never turn down tiramisu cupcakes made with regular cake mix, they miss out on what is to me the key feature of tiramisu - the topping to cake ratio. This Tiramisu cupcake has a homemade lady finger base and LOTS of mascarpone and whipped cream topping". This is MY kind of cupcake...can't wait to try them : )
Tiramisu Cupcake Recipe - adapted from Tiramisu II on Allrecipes Yield: 12 Cupcakes 6 egg yolks 3/4 C white sugar 2/3 C milk 1 1/4 C heavy cream 1/2 tsp vanilla extract 1 lb mascarpone cheese 1 C strong brewed coffee, room temperature 2 tbsp rum ladyfingers baked in cupcake wrappers (see my post on ladyfingers for instructions.) 1 tbsp unsweetened cocoa powder a small amount of dark chocolate for chocolate curls (optional) In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat, and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour. Remove from refrigerator and whisk in mascarpone until smooth. Set aside. In a medium bowl, beat cream with vanilla until stiff peaks form. Set aside. In a small bowl, combine coffee and rum. Drizzle approximately 1 tbsp + 2 tsp of the coffee/rum mixture over each pre-baked ladyfinger. Add it a little at a time and wait for it to absorb into the ladyfingers before adding more. When it stops absorbing, stop adding more. Spread the mascarpone mixture over the soaked ladyfingers. Pipe or spread the whipped cream over the mascarpone. Sprinkle with cocoa powder. Optionally, top with chocolate curls. Make the chocolate curls using a vegetable peeler on a piece of chocolate. It works best if the chocolate is slightly warm, but not melty. Cover and refrigerate 4 to 6 hours, until set.

Rolo stuffed chocolate chip cookies - a very fun recipe! If you make it, cream the butter and sugars together first until it's light and fluffy before adding the eggs and vanilla. This will help the cookies not spread too much, and you won't need to chill the dough as much right before baking! (I chilled it for about 5 minutes and they actually didn't spread enough!)
