Eggs in Hash Brown Nests need to play around with it a bit. maybe small eggs? 15 mins for eggs was too long. maybe take nests out, respray pan before adding eggs. used the ready made, dehydrated hash browns from costco.

Baked portabella mushrooms with rice and egg - this was pretty good, not fabulous, but filling and certainly very low in calories and fat.  It took much longer to cook than I expected, I was thinking 5 minutes cook time, it was more like 18-20 minutes cook time.  Still, I'd make it again.

Curry Chicken Salad Sliders This recipe has been on my mind for over two months and I could not wait any longer to make it. Back in February we had a farewell party for my Mother in Law and her husband who moved - they left.

The Loaded Bowl- quinoa, black beans, tomatoes, cilantro, avacados. My advice for this recipe is to double everything but the quinoa. 3 cups of uncooked quinoa makes A LOT of cooked quinoa leaving not enough tomato, black bean, and avacado. It makes a huge batch so if you dont want left overs half the quinoa or even do just 1 cup and the given portions of everything else. It is a DELICIOUS recipe!
