Easiest almond flour cookies: 1 cup almond flour, 1 egg, 1 tbsp coconut oil (or butter), stevia to taste, 1/4 tsp almond extract (alcohol free)

Cream Cheese Pancakes (or Crepes) 2 oz Cream Cheese 2 Eggs ½ tsp Cinnamon 1 pkt Stevia Warm the cream cheese so that it's mixable, combine all ingredients (I used a blender), and use like normal pancake batter. Top with sugar free syrup or ground xylitol.
