Cheesy Bacon Oven Chips w/Chipolte Ranch Dip: Boil sliced potatoes in salted water for 5 min, pat dry and place overlapping on cookie sheet. spray w/nonstick spray w/ cheese & bacon bits. Bake @ 375 for 15 min or until cheese is bubbly. Top with chives and dip in Chipolte Ranch Sauce
Crispy Smashed Potatoes. Boil potatoes until completely cooked, cool 10 min. Then toss potatoes with 3 tbsp olive oil making sure each is coated with oil. Pour onto a cookie sheet. Take a cup and “smash” each potato to about 1/3 – 1/2 in' thick. Drizzle another 3 tbsp olive oil on the potatoes, sprinkle with garlic salt & pepper. Place the potatoes in your 500 degree oven for 30 minutes. Can add shredded parmesan and bake up to 15 minutes more.
