Chipotle's Cilantro Lime Rice 1 tbsp veg. oil 2 tsp fresh chopped cilantro 1 fresh key lime (or ½ regular lime) ½ tsp kosher salt 1 cup long grain white rice or basmati 2 cups water Sautee the rice in oil until almost translucent. Add water, bring to a boil. When water begins to boil, turn heat to low. Simmer, covered for 15-20 minutes. Turn off heat. DON'T PEEK. LEAVE IT COVERED for 30 minutes. Remove lid, mix salt and juice together until dissolved. Pour over rice and add cilantro.
