How To Cook Perfect Millet Every Time - 1 cup of raw millet and 2 cups of water make 3 1/2 cups of cooked millet. Toast millet until golden brown (this is essential!). Pour the water into the millet and add 1/4 tsp of salt. Bring to the boil then lower heat to a simmer. Drop in 1 Tbsp butter (optional) and simmer ~15 mins. Avoid temptation to stir to peek too much. Remove from heat and let stand (covered) for 10 mins. Fluff and serve. Millet doesn't reheat well.
