cilantro, sour cream, (replace with dairy free sour cream substitutes canned coconut milk) and lime, Mexican Street Corn Soup is a fun and full-flavored way to serve sweet summer corn. It’s easy to prepare, too!
Super easy super yummy crock pot soup: can of rotel, can of corn, can of black beans (drained & rinsed), 2 frozen chicken breasts, 8 oz cream cheese, 1 packet dry ranch dressing, 1 tablespoon cumin, 1 teaspoon onion powder, 1 teaspoon chili powder. Put all ingredients in crock pot and cook 6-8 hours. Shred chicken, and enjoy!
Unstuffed Cabbage ~ All the goodness of the stuffed version, but without the extra work. There isn't a lot of broth like a soup; it is more like stew with just enough to ladle over the rice or dip your bread in.
Creamy chowder loaded with fresh corn and zucchini is the best summer food! This lightened up chowder is made with fresh corn, no flour, and half and half. (I'd sub out the bacon and try the full fat part of coconut milk instead of the dairy--rh)
