Clean Eating Recipes | Clean Eating Pumpkin Pie Oatmeal, can't wait to try, minus egg whites though.
Clean Eating Pumpkin Pie Oatmeal (Makes 4 servings) (Note: the egg whites were my addition in order to get more protein. They are optional.) Ingredients 1 cup dry oats, cooked 1/2 cup pumpkin purée 1 tsp. pumpkin pie spice (no sugar added) 4 egg whites (optional) 1/4 cup pecans per serving Maple syrup to taste Directions Step 1 – Cook the oats according to package directions. Step 2 – In the last 5 minutes of cooking (just take a guess, the oats should basically be pretty much done cooking), quickly stir in the eggs, being sure to stir vigorously so they get well-distributed. Then, stir in the pumpkin purée and pumpkin spice. Step 3 – Put some oats in a bowl and top with pecans and maple syrup. Eat and Enjoy! Nutritional Content 1 serving = 1/4 of the recipe (Figured with 1 tbsp. maple syrup per serving and 5 pecan halves per serving. Also includes the egg whites.) Cinnamon Streusel Baked French Toast This was so amazing. I made it for brunch this weekend and everyone asked for the recipe. I baked it for 50 minutes and it came out soft and chewy on the inside with a delicious cinnamon sugar crust on the outside. The house smelled so good when it was cooking. It was also great to prepare it the night before and just pop it in the oven before my guests arrived. I love easy entertaining recipes.

Crockpot Apple Cinnamon Oatmeal- throw 2 sliced apples, 1/3 cup brown sugar, 1 tsp cinnamon in the bottom of the crock pot. Pour 2 cups of oatmeal and 4 cups of water on top. Do NOT stir. Cook overnight for 8 - 9 hours on low. *make sure you use steel cut oats or your oatmeal will be mush*
Pumpkin French Toast Bake Part 1 Ingredients •3 1/2 – 4 1/2 cups 1-inch bread cubes (depending on type of bread) •7 large eggs •2 cups milk •1 tsp vanilla extract •1 1/2 tsp plus a dash or three pumpkin pie spice and 1/8 cup of brown sugar •1/2 cup pumpkin puree •3-4 tablespoons brown sugar for topping •nuts, like pecan or walnuts (optional)
Pumpkin French Toast Bake, Yum!! Great thanksgiving morning recipe!....5 1/2 – 7 1/2 cups 1-inch bread cubes (depending on type of bread)* 7 large eggs 2 cups milk (any kind)* 1 tsp vanilla extract 1 1/2 tsp pumpkin pie spice 1/4 cup pumpkin BUTTER (or 1/2 cup pumpkin puree)* 3-4 tablespoons brown sugar for topping nuts, like pecan or walnuts (optional)
Pumpkin French Toast Bake - the perfect healthy fall breakfast. Ingredients: 3½ – 4½ cups 1-inch bread cubes (depending on type of bread), 7 large eggs, 2 cups milk (any kind)*, 1 tsp vanilla extract, 1½ tsp pumpkin pie spice, ¼ cup pumpkin BUTTER (or ½ cup pumpkin puree), *3-4 tablespoons brown sugar for topping, nuts, like pecan or walnuts (optional). Instructions: Cut any kind of bread into 1-inch cubes – I recommend a crusty, whole grain variety, but sandwich bread will work, too. Just use enough slice to fill a lightly greased 9×13 baking dish quite full.In a large bowl, whisk together eggs, milk, vanilla, pumpkin butter and pie spice until well combined. Pour over bread and push down with a spoon or your hands until it’s all soaked and mostly covered. Cover with saran wrap or lid and refrigerate overnight. In the morning, preheat oven to 350 degrees, uncover and top with brown sugar, additional pumpkin pie spice and nuts (optional). Bake for 35-45 minutes or golden brown and no longer wet.Serve immediately with maple syrup, honey or agave nectar. Store leftovers in the refrigerator covered for up to a couple days.Notes* I HIGHLY recommend using pumpkin butter as it has a concentrated pumpkin flavor and is much sweeter than puree. But if using puree instead of butter, it’s important to compensate the flavor by adding a bit more puree, pumpkin pie spice, and a little agave nectar, brown sugar or maple syrup to the batter. Otherwise, it will lack that delicious fall, pumpkin flavor you’re going for. * I used 2%, but use skim or low-fat for a lighter recipe. Alternatively, use non-dairy such as soy or almond.Nutrition InformationServing size: 10 slices; per slice: Calories: 122 Fat: 4 g Carbohydrates: 13.7 g Sugar: 7.4 g Sodium: 145 mg Fiber: 1.3 gProtein: 7.8 g

Mini German Pancakes 1 cup milk 6 eggs 1 cup flour 1/2 tsp. salt 1 tsp. vanilla 1 tsp. orange zest (optional) 1/4 cup butter, melted Preheat oven to 400 degrees F. Blend first six ingredients (milk thru orange zest) in a blender. Be careful to see that any flour clumps get well-blended. Blend in butter a little at a time in order to temper the eggs. Grease muffin tins well and distribute batter evenly between 24 tins (I did more like 18. Gimme Some Oven’s tins were slightly less than half-full.
