Instant Pot: Salted Caramel Chocolate Cheesecake | Whatscookinchicago
I'm all about stuffing my face with as many chocolate sweets as possible. As usual, I decided to prepare a chocolate-heavy gluten-free dessert this year. For Valentine's Day, or any other day, any chocolate lover will fall head over heels for this gluten-free salted caramel chocolate cheesecake.

Instant Pot: Tinga Ground Beef Tacos | Whatscookinchicago
Tinga is a Mexican cooking technique that often entails simmering shredded chicken or pig in a sauce before using it as a filling. I decided to make these Tinga Ground Beef Tacos using ground beef rather than chicken or pig. Enjoy this seasoned ground beef that is cooked in a delicious sauce of stewed tomatoes and chipotle peppers in adobo sauce.

Instant Pot: Beef & Green Bean Stir Fry | Whatscookinchicago
This Beef & Green Bean Stir Fry is the most recent meal to come out of my Instant Pot. With tender fresh green beans and onions in a garlicky, sweet sauce, marinated beef is sautéed. It's simple, quick, and, hey, it's even healthy for you!I don't really need recipes to prepare stir-fried food; it just comes naturally to me. You only need to combine whatever you have, taste-test the seasonings, and serve it over rice.
Cookie Day: Chocolate ‘Vegan’ Brownie Cookies | Whatscookinchicago
These Chocolate Vegan Brownie Cookies are really fantastic. I was most surprised to learn that they were vegans. These cookies were made by my friend Melissa, and I absolutely adored how chewy and brownie-like they were. Every bite is infused with the rich chocolate flavor and more chocolate as if that weren't enough. These are undoubtedly for you if you enjoy cookies and brownies.

Caramel Apple Wontons | Whatscookinchicago
It's apple picking season, so I'm taking advantage of the various apple varieties available at farmers markets! I made some apple pie filling to freeze for the winter and had some extra on hand, so I decided to use them to make these Air Fryer Caramel Apple Wontons.
Pecan Meltaways | Whatscookinchicago
Despite the fact that cookies can be enjoyed all year long, there is unquestionably something special about having particular cookies available during the holidays. Undoubtedly one of those cookies are these Pecan Meltaways. Maybe it's the way the powdered sugar is sprinkled on top of them to mimic a light snowfall. Perhaps it's how they melt in your mouth—even better with a steaming cup of coffee or hot chocolate.
Mexican Chocolate Chip Cookies | Whatscookinchicago
These Mexican Chocolate Chip Cookies demonstrate the amazing effects that a little cinnamon can have. These treats are packed with three kinds of chocolate (bittersweet, semi-sweet and milk) laced with a touch of cinnamon and cayenne for a kick! What distinguishes this from a regular chocolate chip cookie, then? The addition of cinnamon and cayenne is a popular combination for a Mexican version.
Peanut Butter Chocolate Chunk Cookies | Whatscookinchicago
One of the most favorite combination my husband loves is chocolate and peanut butter together. With that in mind, this cookie is perfect for him and all the other chocolate and peanut butter fans out there! The combination of rich and creamy Double Peanut Butter Cookie Mix and Triple Chocolate Chunk Cookie Mix make these Peanut Butter Chocolate Chunk Cookies a perfect match.
Christmas S’Mores | Whatscookinchicago
If you simply are in the mood to give some sweet treats, forget the stand mixer. Forget the cookie cutters. In fact, you can make these Christmas S’Mores with only 5 ingredients and no mixing bowl is required! Honey graham crackers are blanketed with buttery brown sugar and topped with marshmallows and festive chocolate candies for a colorful treat. The kids can definitely help with this recipe and I know my son gets a kick out of sprinkling the marshmallows and chocolate candies on top.

Air Fryer Pizza Pasta
This Air Fryer Pizza Pasta was created to satisfy the masses' requests for pizza and pasta. It's full of flavor and, because it's made in the air fryer, it's ridiculously quick and easy. And, yes, you can make pasta in the air fryer!

Chocolate Crinkles
Our first cookie recipe is for Chocolate Crinkle Cookies. This has special meaning for me because making crinkle cookies has been a holiday tradition of mine since I was in high school. However, my first crinkle cookie recipe was a quickie using a boxed cake mix. We're now making Chocolate Crinkles entirely from scratch, which results in a much better flavor and texture.

Chocolate Frosted Cookie Triangles
A variety of flavors and shapes make a cookie tray or putting together various cookies for holiday gift giving more appealing. These Chocolate Frosted Cookie Triangles are a fun twist on the traditional round drop or sliced cookie. Besides, don't these make you want to bite a corner off? These are topped with chopped nuts, but you can also use toffee bits, peanut butter chips, festive sprinkles, or crushed candy canes instead!

Peppermint Bark
It's time to say goodbye to pumpkin spice season and hello to peppermint season! The holidays would be incomplete without peppermint in some form or another. Peppermint Bark is a classic treat that is ideal for gift giving. I've seen some pretty pricey peppermint bark for the holidays. You don't need to spend that much money on something so simple to make at home with your own flair.
Instant Pot: Beef & Broccoli
Even though many people these days are focused on adopting healthy habits, we incorporate healthy ingredients into the majority of our meals. This beef and broccoli recipe, which I adapted from my old stovetop recipe, was recently enjoyed by us. Over vegetable fried rice, the flavorful garlic sauce topped with tender flank steak and fresh broccoli was delicious!
Instant Pot: Key Lime Cheesecake | Whatscookinchicago
You can still maintain your health and occasionally enjoy a slice of cheesecake. If it helps, making cheesecake in the Instant Pot forces you to use a smaller springform pan and practice portion control. I've adapted this recipe to be my go-to cheesecake recipe for everyday baking because it's much simpler and requires fewer ingredients. My Key Lime Cheesecake is absolutely foolproof, and after his first bite, I think my husband fell in love with me a hundred more times.
