The Mojito Base: 1 cup of sugar 1 large sprig of Mojito mint* 1 cup fresh lime juice a bunch of mojito mint 1 bottle (750 ml) 3-year-old rum Beat the sugar, lime juice and mojito mint with the stems until you get a greenish liquid and the mint is completely chopped. Add the rum and beat for one more minute. This can be kept in the fridge for a week. To prepare the mojito, fill a tall glass 1/4 full with the base liquid, add 3 ice cubes and then fill the glass with sparkling water. Add a sprig of mint, stir and serve.

lime & mint water - used a Brita pitcher, sliced up 2 limes, squeezed them a bit before tossing them in the pitcher, washed & crushed several mint leaves & tossed them in the pitcher too...filled with cold water, refrigerated for about 2 hours...YUMMY, refreshing water that's good for you & encourages you to drink more if (like me) you don't drink enough water because you want flavor. HIGHLY RECOMMEND THIS! :)
Mardi Gras Mojito-In a small glass muddle 2 leaves fresh mint with 1 Tbsp simple syrup. Add 2 cubes ice (crush if prefered) and 1 1/4 oz rum. Top with approx 1 oz carbonated water. Garnish with mint or lime wedges.
Skinny Girl Mojito The epitome of the summer drink, the mojito, just got an even better twist to it... it now comes Skinny!! I love mojitos, they are fresh & light (if made from fresh ingredients NOT from a mixture)!! Directions: Twist 6-8 fresh mint leaves in a tall highball glass (twisting the leaves helps release the natural oils) & drop them in the glass. Hand squeeze lime halves over the mint leaves & then drop the limes in over the leaves. Muddle the mint leaves & limes lightly for 10-15 seconds. Add a tablespoon of Truvia (Natural sweetener) & fill the glass with shaved ice. From there, add 2 ounces of a light white or silver rum. From there, top with soda water & gently stir (do not shake).

THE SHUCKS DELUXE Ingredients: 4 large peaches, pits removed and cut in half 2 tbsp. sugar 2 tbsp. lime juice 3 ounces vodka 1 tbsp. lime juice 1 tbsp. honey 1 cup sprite 4 slices of peaches, garnish 2 rosemary sprigs, garnish Prep: Using a food processor, add in the 4 peaches (pits removed), sugar and lime juice. Pulse until pureed. Pour the contents into a fine sieve over a bowl to catch the nectar. Using the back of a spoon, push through all the nectar you can and toss the bits that don't make it through. [To make Rosemary Simple Syrup] Combine 2 cups of water, 2 cups of sugar, 3 tbsp. corn syrup and 1/4 cup rosemary leaves in a medium saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and rest for 20 minutes. Strain into a glass and refrigerate until chilled. Using a cocktail shaker filled with ice, add in vodka, lime juice, honey, 2 tbsp. rosemary simple syrup, 4 tbsp. peach nectar and shake. Pour into two cocktail glasses filled with ice and top with Sprite and a splash of water. Garnish with two peach slices per drink and a rosemary sprig.
