Crockpot Breakfast Casserole Save Print Prep time 20 mins Cook time 8 hours Total time 8 hours 20 mins Recipe type: Crockpot Serves: 8-10 Ingredients 1 dozen eggs 1 cup milk 1 package (32 oz.) frozen hash brown potatoes 1 lb of sausage, browned and drained or 1lb of bacon, cooked and crumbled (or use both) 2 cups cheddar cheese or colby jack – shredded ¼ teaspoon dry mustard (optional) ¼ teaspoon salt ½ teaspoon black pepper ½ cup green onions – diced (optional) 1 green pepper – diced (optional) Instructions Spray your crockpot with no stick cooking spray or use a slow cooker liner and spray it. Layer potatoes, bacon or sausage, onions (if using), green pepper (if using) and 1 pound shredded cheese in the crock pot in two or three layers. Sprinkle the remaining 1 pound shredded cheese over the top evenly. Beat the eggs, milk, mustard, salt and pepper together. Pour the egg mixture over the cheese evenly in the crockpot. Cook on low for 7 to 8 hours or until eggs are set and thoroughly cooked, start this at midnight and wake up to a delicious breakfast! Serve and enjoy! Notes I used a crockpot liner sprayed with non-stick cooking spray for easy clean-up. The casserole may burn along the edges a little bit so watch your time the last hour. Strawberry Banana Individual Baked Oatmeal @ My Whole Food Life Strawberry Banana Baked Oatmeal 1 1/2 cups rolled oats 2 ripe bananas mashed 1/2 cup unsweetened coconut 1 cup strawberries (I used freeze dried) 1/4 cup maple syrup 2 T coconut oil 2-3 T milk (I used almond milk) Preheat oven to 350. Mix all the dry ingredients in one bowl. Mix wet into another. Add wet to dry. Spoon batter into greased muffin pans and bake in the oven for around 20 minutes. I used jumbo muffin pans

Biggest loser oatmeal pancakes ~ tastes like French toast! 6 egg whites 1 c rolled oats, dry 1 c cottage cheese 2 tsp sugar 1 tsp cinnamon 1 tsp vanilla. In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat, spraying the griddle as needed. Makes about 10 pancakes. Want to try.

Yummy French Toast Bake Ingredients 1 loaf French bread (13 to 16 ounces) 8 large eggs 2 cups half-and-half 1 cup milk 2 tablespoons granulated sugar 1 teaspoon vanilla extract 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg Dash salt Praline Topping, recipe follows Maple syrup Directions Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight. The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup. Praline Topping: 1/2 pound (2 sticks) butter 1 cup packed light brown sugar 1 cup chopped pecans 2 tablespoons light corn syrup 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

Melt butter in microwave & add brown sugar....stir till mixed. 2. Pour butter/sugar mix into bottom of 9 x 13 pan....spread around 3. Beat eggs, milk, & vanilla 4. Lay single layer of Texas Toast in pan 5. Spoon 1/2 of egg mixture on bread layer 6. Add 2nd layer of Texas Toast 7. Spoon on remaining egg mixture 8. Cover & chill in fridge overnight 9. Bake at 350 for 45 minutes 10. Sprinkle with powdered sugar 11. Serve with warm maple syrup (I don't do the syrup part) - Crack eggs & get them started (on low) - Melt butter in microwave - Add brown sugar & stir together - Pour mixture into 9 x 13 pan - Spread evenly to cover bottom of pan - Add milk & vanilla to egg mixture - *Add 1 Tablespoon powdered sugar to egg mixture* - Spread even layer of Texas Toast on butter/sugar layer - *I cut off the crusts...this is NOT necessary....I just think it looks nicer...it was for a bridal shower*- - After you have 1 even layer, ladle on 1/2 of egg mixture - *Sprinkle brown sugar & cinnamon before next layer* - Spread second layer of Texas Toast - Ladle second half of egg mixture - *Spread thin layer of butter* - *Sprinkle lightly with white sugar & cinnamon* (I think the butter & sugar help give the final product a crusty top....I could easily be wrong....but it sure doesn't hurt the flavor....and since this recipe is far from figure friendly...then why not?) - Refrigerate overnight - Bake at 350 for 45 minutes - Sprinkle with powdered sugar - Top should be crusty, middle should be soft & moist, & bottom is just glorious! - The recipe calls for eating it with warm maple syrup. I did not do this....it would be way too sweet....instead, I added the Tablespoon of powdered sugar in the egg mixture. - I personally feel that eating it upside down is the way to go.....that way you don't waste any of the sticky bits of heaven on the plate
French Toast bake.... It was ok... not my fave. Probaby wouldn't make it again just because I have so many other delicious baked french toast recipes.
Going to make this for Christmas morning. Cant wait! French Toast Bake *****update, made this and was way too sweet. Maybe next time less brown sugar.
