Coctel De Camarones (Mexican shrimp cocktail) - 1 -2 lb shelled and cooked shrimp (50-60 count), 2 -3 large tomatoes , chopped ½ small white onions, chopped or 2 green onions, ½ cup cilantro , slightly chopped ½ jalapeno , diced, with seeds, 1 avocado , chopped, tomato juice (V8), lime juice, salt and pepper Mix all in glass bowl and chill, serve with crackers.
I drink all mine plain, but if you wanted a little sweetness add, 2 tsp. stevia to the mix. All Citrus: water, 1 orange, lemon, and lime cut up. Raspberry Lime: water, raspberries, 1 lime squeezed and put in. Watermelon Rosemary: water, Cut up 1 c. watermelon, as much rosemary sprigs as you want. Blackberry sage: water, 1/2 c. blackberries, 3 sage leaves. Pineapple Mint: water, 1/2 c. cut up pineapple, handful fresh mint. I also like to add Mint to watermelon in place of rosemary.
