What's For Supper
Every weekday on Beach 104 and 94.5 WCMS hear "What's For Supper" between 4:30 and 5pm.
Baked Stuffed Fish 3- 4 lb Drum or rock deboned, butterflied leaving one side attached 2 cups seasoned bread stuffing 1 onion sliced sauteed 4 tbsp butter melted Salt/ Pepper to taste 3 slices bacon Mix Bread stuffing, salt, pepper,sauteed onion,and melted butter. Open fish butterflied,season inside of fish, place stuffing one one side, close, Tie closed with cooks twine. Lay bacon slices on top of fish. Bake at 350 for about 40-60 minutes or until fork flaky. Serve boiled buttered potatoes.
Crab Bisque 1 lb lump crabmeat 5 tbsp butter ½ tsp dry mustard 1 tsp salt ¼ tsp white pepper 4 tbsp flour 1 cup chicken broth 1 qt milk ¼ cup sherry paprika Melt butter in a sauce pan, add flour stir to blend, stir in broth simmer about 10 minutes, add the milk, gently add crabmeat cook about 5 minutes, dash in the sherry, remove from heat, season to taste.
Curried Shrimp 1 lb shrimp peeled ¼ cup green onion chopped 3 tbsp butter or olive oil 3 tsp flour ¼ tsp salt Dash pepper 1-2 tsp curry powder 1/4 tsp fresh ginger grated 2 cups unsweetened coconut milk Saute shrimp in butter without turning to caramelize, remove. Add onion, cooking until tender, blend in flour and seasons, slowly add coconut milk, cook until thick stir constantly, add shrimp heat through. Serve with steamed rice.
Baked Hard Crabs 2 dz hard crabs, cleaned Salt and pepper Butter or olive oil Old bay season(if desired) Remove the legs and claws from the cleaned crabs. Place crabs in a single layer on a bake sheet, drizzle with the butter or olive oil, season with salt and pepper, some old bay if desired. Bake at 350 for about 20- 25 minutes. Remove crabs from pan. Toss some hot cooked pasta in pan to soak up crab butter.
Pan Seared Rock 1-2 lb rock sliced into steaks Olive oil Salt and pepper Drizzle fish with olive oil, season with salt and pepper. Heat about 1/5" olive oil in a non-stick skillet to medium, carefully place fish meat side down let sear without moving until nice and brown, flip. Serve with Jazzed up rice
Pan Seared Scallops 4-5 sea scallops per person Olive oil Salt and pepper Lightly oil one side of scallops, season with salt and pepper. Get a nonstick skillet medium hot, place oil side of scallops in skillet, let sear without turning about 2-3 minutes then turn a little. Serve with some steamed Jasmine rice and cool cucumber salad.
Beer Battered Fried Oysters 1 pt oysters ½ cup flour 6 tbsp beer 1 tbsp oil ¼ tsp salt ¼ tsp pepper 3 egg whites stiffly beaten Combine flour, beer, oil, salt and pepper in a bowl. Fold in egg whites. Roll oysters in batter, deep fry until golden brown, about 3-4 minutes. Serve with boiled potatoes and green beans.
Oyster Fritters 1 pint oysters 1 cup Abbitt hushpuppy mix w/ onions 1 egg Oil for frying Drain oysters, Mix hushpuppy mix as directed, adding egg. Stir in oysters, mix well.Heat oil to medium, spoon in fritter mixture,fry until golden brown, on each side, about 2-3 minutes each. Serve with steam spinach and boiled potatoes.
Boiled Drum with Potatoes 1 large side of drum diced in large chunks 4-5 medium potatoes large dice ½ lb salt pork diced Green or white onion chopped Boil potatoes and some of the onion in water until potatoes are tender, remove to a large bowl, cover. Add fish to potato water and slowly cook until fork flaky. In the mean time fry out the salt pork until crispy brown. For more information go to www.facebook.com/...
Crab Soup 1 lb Lump Crab meat 2 tsp olive oil 2 cups onion chopped ½ tsp garlic chopped 3 medium can tomatoes chopped, 1 tsp salt 1/8 tsp pepper Dash of Texas Pete ½ tsp lemon juice Zest of the lemon Fresh parsley 2 quarts water Remove any shells from crabmeat. Oyster Pie 1 pt oysters drained 2 cups cooked spinach 2 Tbsp light cream 1 medium Shallot minced Phyllo Pastry Salt and pepper to taste ½ cup Butter ½ cup Olive oil Drain spinach well, set aside, mix olive oil and butter. For More Information go to www.facebook.com/...

Bake@ 350 for about 25-30 minutes, or until fork flakey. Serve over boiled buttered potatoes or cooked rice.

Fried Oysters 1 pint oysters House-Autry seafood breader Oil for frying Drain oysters well. Dredge in the seafood breader. Deep fry until golden brown, about 4-5 minutes, drain on paper towel. Serve with boiled potatoes and cooked spinach
Oyster Chowder 1 pint oysters 3 Tbsp onion chopped 3 Tbsp butter 1 cup water 2/3 cup celery diced 2 large potatoes diced Salt/ pepper 1 quart milk Parsley Saute onion in the butter until tender, add potatoes, celery, and water, just to cover potatoes, season with, salt and pepper, cover, slow cook until potatoes are tender. Add milk bring to low simmer, add oysters simmering about 5-8 minutes, add parsley. Serve with warm crusty bread.
Fish Cakes 4 cups cooked fish Drum, Rock, White, flake fish 3 cups boiled potato mashed 1 egg beaten 1 small onion diced Salt and pepper House-Autry seafood breader Make sure there are no bones in the fish. Mix fish, potatoes, onion,egg, salt and pepper in a bowl. Make into small patty cakes, roll in seafood breader. Fry in medium hot oil in a skillet, until golden brown on both sides. About 3-5 minutes per side. Serve with Cole slaw and Cornbread.
Simple ingredients from Conner's Supermarket Brown ribs in heavy skillet, drain off excess oil. Add Sweet Baby Ray's BBQ sauce, cover, slow cook about 25 minutes, turning occasionally. Dice tomatoes, cut corn from cob, quarter potatoes, remove end from green beans, put all this in sauce pan, add just enough water to cover potatoes, season.Low boil about 20 minutes.
