Baked Stuffed Fish 3- 4 lb Drum or rock deboned, butterflied leaving one side attached 2 cups seasoned bread stuffing 1 onion sliced sauteed 4 tbsp butter melted Salt/ Pepper to taste 3 slices bacon Mix Bread stuffing, salt, pepper,sauteed onion,and melted butter. Crab Bisque 1 lb lump crabmeat 5 tbsp butter ½ tsp dry mustard 1 tsp salt ¼ tsp white pepper 4 tbsp flour 1 cup chicken broth 1 qt milk ¼ cup sherry paprika Melt butter in a sauce pan, add flour stir to blend, stir in broth simmer about 10 minutes, add the milk, gently add crabmeat cook about 5 minutes, dash in the sherry, remove from heat, season to taste.

Curried Shrimp 1 lb shrimp peeled ¼ cup green onion chopped 3 tbsp butter or olive oil 3 tsp flour ¼ tsp salt Dash pepper 1-2 tsp curry powder 1/4 tsp fresh ginger grated 2 cups unsweetened coconut milk Saute shrimp in butter without turning to caramelize, remove. Add onion, cooking until tender, blend in flour and seasons, slowly add coconut milk, cook until thick stir constantly, add shrimp heat through. Serve with steamed rice.

Baked Hard Crabs 2 dz hard crabs, cleaned Salt and pepper Butter or olive oil Old bay season(if desired) Remove the legs and claws from the cleaned crabs. Place crabs in a single layer on a bake sheet, drizzle with the butter or olive oil, season with salt and pepper, some old bay if desired. Bake at 350 for about 20- 25 minutes. Remove crabs from pan. Toss some hot cooked pasta in pan to soak up crab butter.

Heat about 1/5" olive oil in a non-stick skillet to medium, carefully place fish meat side down let sear without moving until nice and brown, flip. Serve with Jazzed up rice

Beer Battered Fried Oysters 1 pt oysters ½ cup flour 6 tbsp beer 1 tbsp oil ¼ tsp salt ¼ tsp pepper 3 egg whites stiffly beaten Combine flour, beer, oil, salt and pepper in a bowl.
