Hearty Chicken Stew with Butternut Squash & Quinoa--amazingly good and reheated nicely after freezing. I would probably call this a weekend meal though. It takes a bit more time but well worth it because it is delicious. Probably one of my favorite meals.
Barbecued Ribs: Fall-Off-The-Bone Ribs - OMG Amazing and the best I've ever made. I used my own rub, baking thick sections of three ribs each at 325 degrees for 2.5 hrs. and then broiling as instructed. They come out so tender that you can eat them without picking up the bone. They fall right off! And the flavor goes all through the meat. My old recipe is now in the garbage! #ribs
Easy One Pot White Chicken Lasagna Soup - my family LOVES this soup! It tastes just like creamy white chicken lasagna with layers of cheesy noodles without all the layering or dishes! Simply saute chicken and veggies and dump in all ingredients and simmer away!
Fall Off the Bone Oven Ribs (So easy!! I use spare ribs and marinate in store-bought dry rub overnight. I don't add BBQ sauce while baking and just let people add their own at serving. Sooo tender and flavorful!)
