Paleo Minestrone soup, crock-pot style. Everyone LOVED this. Good basic recipe that can make good use of what veggies you have on hand. I doubled the spinach (didn't want to leave half of a box) and skipped the zucchini. I also used a full 2 lbs. of sausage.
Homemade Vegetable Stock---this works great. I keep a running bag in my freezer of leftover veggies/onion skins/herbs now and just boil them up when the bag gets full. Things that should always be in there when cooking it up: garlic, onion, celery. Anything else goes. Super flavourful, just freeze the broth flat in freezer bags to keep on hand.
