Well what can one say. Not quite the holiday one hopes for snow. Happy Easter.

Gründonnerstag Meal (Green Thursday)  The traditional meal on the Thursday before Easter in Austria and in my area of Carinthia consists eggs spinach & potatoes.  5 leaves/stalks of Silverbeet 1 small Sweet Potato 1 Egg Coconut oil for frying  Boil the sweet potato. Peel and slice small. Slice up the spinach and sauté in a small frying pan. Take the boiled sweet potato and add to the pan. Add the egg. Sprinkle a good dose of milled pepper. (Salt to taste if you wish). Cook Serving for 1.
