Cilantro Lime Rice: Ingredients 1 cup long-grain white rice 2 cups chicken broth Juice of 1 lime ½ cup cilantro, chopped Place rice and chicken broth in a pot and bring to a boil. Cover, reduce heat to low and cook 20 minutes. (If you have a rice cooker, just combine rice and broth and cook until done.) When rice is done cooking, fluff, and mix in juice and cilantro. Serve immediately (or else cilantro will become wilted and lose its vibrant color).
