I add a little chipolte chili powder to the cornbread and cook a bit longer( I also use an egg) I cook my chicken first then shred and add salsa, cumin and chili powder with a little water and stir, cook water off and then I mix the enchilada sauce with the chicken instead of pouring over cornbread.(And I use more cheese) I serve with greek yogurt, avacado and spanish rice and beans.
preheat oven 350. mix 2c shredded chicken, 2c shredded cheese, can of cream of chicken, 1/2c milk, 1/2c sour cream, can of drained rotel, & 1/2 pack taco seasoning. Grease casserole dish. Crush 1/2 bag doritos and place in bottom, top with mixture, crush a few doritos on top. Bake for 30 minutes. Garnish with lettuce and tomatoe.
