Coconut cake with cream of coconut. This is a refrigerator cake, so make sure you have room! I did a sheet cake vs round. And, it is definitely better the 2nd day vs last night. I believe there is an error in the recipe, as it calls for 3 full eggs vs 3 egg whites (if you put in the 3 full eggs your cake will turn yellow vs white). I did the 3 egg whites and it turned out fine. Then, I made the icing and hated it! I threw it out and used a cream cheese icing using a basic recipe, but substituted the left over unsweeted coconut milk (coconut milk will whip up just like heavy cream) for the heavy whipping cream. Recipe is as follows: 1 (8 ounce) package cream cheese, softened 1/2 cup unsalted butter, softened 4 cups confectioners' sugar 2, 3 or 4 tablespoons unsweetened coconut milk (use this to thicken or thin the confectionery sugar) 1 teaspoon vanilla extract 1 cup sweetened shredded coconut inside of the icing 1 cup sweetened shredded coconut scattered around the top (this would be a great Easter cake in that you could color the topped coconut)
I remember as a child, begging my mom to buy a coconut at the grocery store so I could drink the coconut milk. I desperately wanted to hold a half coconut in my hands and drink from it like I saw on TV. Finally my mom bought one and I discovered that not only are coconuts way harder to crack open that what I had always been led to believe, but coconut milk was completely disgusting. YUCK. Recently my son when through the same phase, and BEGGED me to buy a coconut when we were at the store. I bought it and when we came home I put my husband to work getting it cracked open. “Why did you buy this thing anyways, he’s not gonna like it,” my husband said. And I explained to him the thing that makes us moms just a little smarter than the average person. The thing that my mom obviously knew all those years ago. That I could tell my son he wouldn’t like it, but he would never believe me. It is much easier to spend the couple of dollars and let him see for himself. And then he will never bother me about a coconut again. My husband then admitted that he too once talked his mom into buying a coconut so he could drink from it. He too was disgusted. And he too, was done with fresh coconuts. After about sixteen hours (ok, maybe twenty minutes, but it seemed longer), my husband got the coconut open. My son grabbed it and took a sip….and the look of disgust on his face was priceless. That is when I learned that not only was it worth the money to get him over his little coconut dream, but also to see the look on his face when he tasted the milk. Maybe my mom knew that too. I have made this coconut cake a couple of times, and so far it is my favorite. The recipe is from The Cake Mix Doctor Returns, and it is best made a couple of days in advance. The frosting, made with sugar, sour cream, and whipped topping, can then absorb into the cake layers, making it even more moist and delicious. Print Easy Coconut Refrigerator Cake IngredientsVegetable oil, for misting the pan Flour, for dusting the pan 1 package (18.25 oz) plain white cake mix (my favorite is Duncan Hines) 1 cup milk 1/2 cup cream of coconut, plus more cream of coconut for brushing the baked layers 3 large eggs Frosting: 2 cups sour cream 1 3/4 cups sugar 1 container (8 oz) frozen whipped topping, thawed (Cool Whip) 3 1/2 to 4 cups sweetened flaked coconut InstructionsPlace a rack in the center of the oven and preheat oven to 350. Lightly mist three 9 inch round cake pans with vegetable oil spray, then dust them with flour. Shake out the excess flour and set the pans aside. Place the cake mix, milk, 1/2 cup cream of coconut, and eggs in a large mixing bowl and beat with an electric mixer on low speed until the ingredients are incorporated, 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat for 1 1/2 minutes longer, scraping down the sides of the bowl again if needed. The batter should look well blended. Divide the cake batter evenly among the 3 prepared pans, about 1 1/2 cups batter per pan, smoothing the tops with a rubber spatula. Place the pans in the oven. If your oven is not large enough to hold 3 pans on the center rack, place to pans on that rack and one in the center of the rack above. Bake the cake until layers are light brown and the tops spring back with lightly pressed with a finger, 18 to 23 minutes. The cake layer on the higher rack may bake faster, so test it for doneness first. While the cakes bake, make the frosting. Place the sour cream and granulated sugar in a large mixing bowl and beat with an electric mixer on low speed for 1 1/2 minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat until the sugar has dissolved, 2 minutes longer. Add the whipped topping and beat on low speed until well blended. Stir in 3 cups of coconut and beat on low speed until mixed. Place the frosting in the refrigerator to chill for at least 10 minutes. Transfer the cake pans to wire racks and let the cake layers cool for 5 minutes. Run a sharp knife around the edge of each cake layer and give the pans a good shake to loosen the cakes. Invert each layer onto a wire rack, and then invert again so they are right side up. While the cakes cool, use a small brush to gently brush the tops of the cake with the remaining cream of coconut. Let the cakes cool completely, 15 minutes longer. When the cakes are cool, use a large serrated knife to cut each cake in half horizontally to make 6 layers. To assemble the cake, transfer one layer, cut side up, to a serving platter. Spread the top with a heaping 2/3 cup frosting. Place another layer, cut side up, on top of the first layer and frost with 2/3 cup frosting. Repeat this process with the remaining layers and frost the top and sides of cake. Sprinkle 1/2 to 1 cup coconut on top of the cake for garnish. FAIL: This is NOT the BEST coconut cake recipe ever. Easy Coconut Refrigerator Cake I don't care for the tartness caused by using sour cream. We prefer my usual recipe that uses a can of cream of coconut and a can of sweetened condensed milk.

Simple, comforting, versatile and inexpensive it’s easy to see why it’s on high rotation in most family dinner repetoires. But sometimes pasta can get a little boring week after week. Which is when I look to Asia and the wonderful of world of noodles for inspiration to freshen things up. From fresh hokkien noodles, to dried rice sticks to soft Japanese udon noodles. There are so many options to choose from. And they’re fast. No need to boil for 10 minutes or more like pasta, just pour over some boiling water, soak for a few minutes and serve. I know the thing that holds me back from cooking Asian food is the long ingredient lists and the thought of having to buy a whole heap of different sauces that I’m only going to use every now and then. So I’ve tried to keep things simple. To cook all 5 dishes you’ll only need three sauces – soy, fish and oyster. If you haven’t cooked Asian before I’d urge you to at least invest in a bottle of soy sauce and start from there. So why not surprise the family with some noodle fun? japanese noodle soup with spinach serves 2 Udon noodles a lovely fat white Japanese wheat noodles. I’m still not sure how they can be all soft and fresh looking but come in packs that don’t need refrigerating. Noodle magic? They are brilliant to have on hand for a quick meal. Just add in some some soy sauce lemon and baby spinach for a deeply satisfying nutritious dinner. 1 chicken breast, finely sliced into ribbons 2 tablespoons soy sauce 1 packet udon noodles (7oz or 200g) 1 packet baby spinach leaves or 1 small bunch english spinach lemon juice Bring 2 cups water to the boil in a medium saucepan. Add chicken and simmer for 1-2 minutes or until cooked. Scoop out chicken with a slotted spoon and divide between 2 bowls. Return broth to the heat and add noodles, soy and spinach. Stir to break up the noodles and let the spinach wilt. You might need to add the spinach in batches. Don’t worry it will fit in as it wilts. Add 1 tablespoon lemon juice, stir and taste. Keep adding lemon until it tastes fresh and zesty. Pour soup over the chicken and serve hot. 2 minute noodles with bok choy & oyster sauce serves 2 If the thought of using 2 minute noodles disturbs you, by all means try another noodle but I was pleasantly surprised how lovely they were with the fresh greens and the savoury sauce. If you can’t find bok choy, any other asian greens would work or you could just use a big bunch of English spinach. 1 packet 2 minute noodles – chicken flavour 1 bunch baby bok choy, separated into individual leaves 1/3 cup oyster sauce 1 teaspoon sesame oil Place about 2 cups water in a medium saucepan and add the flavour sachet from the noodles and bring to the boil. Add bok choy and noodles and simmer for 2 minutes until noodles are cooked and the bok choy is wilted. Drain and return to the pan. Stir through oyster sauce and oil and serve hot. veggie laksa serves 3 Laksa is a wonderful coconut milk based noodle soup that hails from Malaysia. These days you can get commercial laska or other Thai curry pastes that take all the hard work out of it. I’ve used Singapore noodles in this recipe which are a fine version of fresh hokkien noodles but I have eaten laksa with rice noodles and even a combination of the two so feel free to substitute. I’ve cheated a little on the 5 ingredient rule by including ‘mixed chopped vegetables’ as a single ingredient. I actually used a carrot, a zucchini and a red pepper, all cut into little batons. Chicken laksa is also really popular. Prawn or shrimps are lovely cooked in the spicy fragrant coconut broth. 3/4lb (350g) fresh Singapore noodles 2oz (60g) Laksa paste or other Thai curry paste 1 large can (1 1/2 cups) coconut cream 2 cups mixed chopped vegetables (see note above) handful fresh basil leaves Place noodles in a heatproof bowl and cover with boiling water. Allow to stand for 1 minute then massage to loosen into individual strands. Drain. Meanwhile heat 2 tablespoons of peanut or other vegetable oil in a large saucepan over high heat. Add curry paste and stir fry for 30 seconds. Quickly add coconut cream and 2 cups boiling water. Bring to the boil and add vegetables. Simmer for 2 minutes or until vegetables are cooked to your liking. To serve, divide noodles between 3 bowls. Pour over soup and vegetables and top with basil leaves

Pan Roasted Chicken With Lemon Garlic Green Beans - *6 tablespoons olive oil *2 lemons, 1 thinly sliced, 1 juiced *4 cloves garlic, minced *1 teaspoon kosher salt *1/2 teaspoon freshly ground black pepper *3/4 pound trimmed green beans *8 small red potatoes, quartered *4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)
Garlic & lemon chicken with green beans & roasted potatoes: Just toss it in the oven for a complete meal. Serve w crusty bread to soak up the lemony sauce. Directions 1. Preheat oven to 450°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet. 2. In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken. 3. Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.

Although it might have been interesting to see how many pot-heads hit on Tasty Kitchen in their online searching. Just sayin’. Preparation Instructions Mix cake mix, oil, eggs, mandarin oranges and vanilla together in mixer. Beat a couple of minutes until well-blended. The oranges will break up into tiny bits during this process. Pour into a greased 9×13 pan and bake 30-35 minutes at 350F. (You may also bake in a jellyroll pan, 15 minutes at 350F.) It will be golden brown across the top and a toothpick will come out clean when done. Let cool completely before frosting. Uses Hawaiian rolls to make ham and Swiss sliders. Made these last night (4-6-12) and loved the combination of slightly sweet rolls and savory topping! The only thing I'd change is to cook it a little more than the recipe says after you take the foil off. Just be sure the tops are lightly crispy or it's a bit soggy on top (but even then, was delish!).

These Four No More: Crockpot Swiss Chicken Casserole

Crockpot Chicken and Dressing adapted by Southern Plate * 4 chicken breasts, cooked * 2 pans of cornbread or two quarts (I always use Buttermilk or "Dixie" cornbread) * 2 hamburger or hot dog buns (I have used leftover, homemade yeast rolls or white bread) * 2 Tbsp sage (add more to taste. I usually end up adding about a Tablespoon more) * 1 medium onion, chopped * 2-3 eggs, hard boiled and chopped * 2 cans cream of chicken soup (separated) * 1 stick margarine or butter, melted * 2 cans chicken broth (3-4 cups) CHICKEN: While preparing the other ingredients in the dressing, season with salt/pepper, and poach (or simmer in a little water in a saucepan) the chicken breasts for about 10 minutes. DRESSING: Mix together cornbread, other bread, sage, onion, hard-boiled eggs, one can cream of chicken soup, melted margarine or butter, and two cans of broth in a big bowl. PREPARATION: Make a layer of half the remaining can of cream of chicken soup in the bottom of a large crock pot. Top with 1/3 of the dressing. Top dressing with half of the chicken, shredding it as you put it in. Top with 1/3 dressing, remaining chicken, and remaining dressing. Spread other half of cream of chicken soup over top.
